So apparently, lightly scratched ceramic pans are ok, but deeply scratched should be replaced immediately. They can harbor bacteria in the damaged areas. If the coating flakes off into your food, it could be risky to ingest. If the pan is scratched down to the bare metal, it may leach aluminum into your meal.
