Hey guys ! I would like to share a cooking tip for grilled lean fish. After you gut the fish you can put a fair amount of rock salt on it ( inside and outside). Pop it in the fridge for a couple of hours and after that just clean the salt off with a tea towel ( or bear hands ). This will take most of the moisture out from the fish and prevent it from sticking to the grill .The meat will be flaky and delicious, not salty at all . Chears !
Love The OutFit videos :-) A helpful technique for skinning is to have your cutting surface and filet near the edge of your table, then proceed as you did but with you knife handle suspended off the cutting surface. This way you can get super close to the skin and your filet has the most meat. Cool seeing the video of the Dugongs, I looked them up and found they are similar to our Florida Manatees but with tail fin and other differences, excellent sighting. Enjoy!

My wife and I went to France for the first time last year and it taught me so much about Australia. Looking forward to a return visit post COVID. If I had been your age I doubt if I would have returned.
