Hey check out Eliot Coleman. He doesn’t winter garden, he winter harvests. He lives in Maine so his techniques may get y’all in the north at least a little longer growing season depending on where y’all located. Hope this helps!

@@jmessick8163 LOL Maine is VERY different from Saskatchewan. Yes they get snow and storms etc but they do not get -40. I can barely get out to look after the chickens in our winter, forget frost blanket tunnels, those would collapse under snow here and even if they didn't, how do you handle that with huge mitts on and pick lettuce that way? Not happening. I can grow small amounts of lettuce and a tomato plant in the house once we get more organized and move the living room wall back.

@Justin Rhodes honestly at this point, why don't you invest in some milking equipment. You can always still milk when its convenient by hand, but it sure would make it a lot more feasible to integrate more milk cows for cheese production without burdening the family with more chores.

Get yourself a couple of banana pups online from Nick's fruit trees in Central Florida. Put in pots and grow in your house. Bananas are easy to grow. Just water them a lot and throw compost in frequently. Once you get a stalk of bananas you will get another pup under the current pup. Pull out the bananas stalk after you harvest the fruit off of it.then the next year your new pup will grow and you will get more bananas.

Our family really noticed a difference with our gardening 3 seasons out of the year. We did harvest carrots, beets, and turnips in winter so we didn't have to buy any of those. In the summer and autumn, the only vegetable we bought from the store were the ones we didn't grow, so our Spring and late Summer planting schedule has added these in. We don't have enough space (or the permissions needed) to raise dairy animals, but we have a great farmer to get a lot of regular dairy (that we can make the products from) and meats.

You don’t need to buy more cows and supplement with hay - that’s not self sufficiency that madness! You’re trading the grocery store for the feed store.
You have a large farm. You need to change the way you eat to reflect what you can grow with what you have. Stop trading one input for another.
You need more milk cows and less beef cows. You need to diversify your meat production and make use of the summer growing months better.
Sort out what’s happening with your sheep. They are a fast growing meat source that should have a bigger place on your homestead as you don’t need a lot of inputs to raise them during the summer.
You need to do pork sustainably. Ditch the heavy reliance on grains and get them to forage for more of their feed.
Eat more things that you can grow without inputs. Your plates are very meat heavy and your health isn’t great for a family that eats organic and refined sugar/grain free and doesn’t send their children to school, so clearly your current diets aren’t equalling good health.

I’m glad you finally got a round pen. it will help a lot with the horses. We put our water hoses in the little greenhouse after draining them, it stays warmer in there. People have to look at the benefits and cons of growing your own food. Yes it’s healthy but will it save you money too? How much does a cow, hay, feed, garden cost in the end? Do you have the time and money for that? If you enjoy gardening, milking and growing your meat that’s great, I love to do it too. But it’s not going to save you as much money as you think. Don't forget with cheese a lot of the stuff you like needs somewhere to be stored for a long period of time, which is another hurdle. It'll take awhile to have cheddars and other not fresh cheese even with the extra milk. And you also have to count the time, effort, and tools for making cheese at the scale you'll need for that many people.

Is this shading someone about not working? Hmmm i noticed statements in a few videos but i could be wrong. Some trades people are under a lot of pressure with rising costs and supply issues, less ppl in the work force and frankly less healthy people available to work in the winter. Trade work takes a toll on their body. In Canada our trades ppl have to travel to jobs and travel back home to see their families. That's my perspective as a tradepersons wife aware of the other side of the work and all the moving pieces required. Will Justin and Rebekah work on their own house? It may be good content to setup a tripod and give Randall a hand. I'd rather see that than another 100 day diet which sounds depressing. Does it align with the eat what you grow strategy? As a compliment i think your character and charm is what keeps many viewers loyal to you. Anyway if there's a hiccup with the house say so professionally or maybe try not to discuss online. Thanks for considering an alternate opinion as #constructivecriticism and wishing others continue to uplift each other. .

The moment that Justin realises that his family doesn’t eat much salad and vegetables or even enjoy gardening or preserving after working like a crazy man to create 50% of the weekly from the garden. Also the moment that he realises that they mostly eat dairy but nobody can be bothered to process the milk except himself or store it as cheese, butter and creams. Buying another cow or digging up another bed doesn’t solve these problems. They’re going to be employing an entire team to process and put up the produce and dairy next summer. How is this different than going to the supermarket?

    Justin and Rebecca,
I don't remember if you have done this, but rather than buying cows each year, why not buy a bull and have the cows breed so that you are perpetually raise your own cattle in an ongoing way. Then each year maybe buy one cow and retire what was a breeder, but that no longer breeds, and harvest the former breeding cow with the other cows you have chosen to harvest. Maybe every 2nd year rotate a new bull in and an the older bull out by trading bulls with another homestead or farm so that you are bringing in new blood lines which will prevent in having still births. The same with the pigs. And why not raise goats as well? Actually, the same with chickens as well.
To me it just seems to make more sense economically as well as theoretically, to not just grow the animals, but also breed and raise them. Then when you have two or three great breeding pairs of animals and introduce new males every 2nd year, your extending blood lines in the animals which is going to produce a better animal and better food.
If you were going to harvest 30 chickens a year, then buy double that amount once. Grow them out the first year, harvest the 30 weaker or not as strong chickens, (hens and roosters), get 5 new hens and 1 more rooster. Split the hens into different enclosures with a single rooster, and then whichever rooster fathers more, keep that rooster for the next 2 seasons and harvest the weaker rooster each year when you bring in a new rooster. Again, this is all to create different bloodlines and stronger, hardier animals. Do the same with ducks and turkeys. You have a perfect pond for raising healthy ducks, why not use it for them. Duck eggs are far healthier than chicken eggs and duck eggs are higher quality eggs than ducks as well. Ducks also have a better quality of life socially which produces a better quality of food.
I love eating chicken, but I would easily skip over chicken for duck any day. It tastes better, is higher nutrition, eggs are higher quality, all because of the farming techniques as ducks take longer to mature for harvesting, and, ducks are great for keeping away a lot of pest animals as well. Oh and duck meat also has a higher fat count than chicken meat, so much so that you can actually render duck fat for cooking other foods in the same way you render pork fat, however duck fat isn't as much of a process to render down, it basically happens naturally when duck is roasted. Oh and Deep Fried Duck, WAYYYYYYYYYYYY BETTER THAN DEEP FRIED CHICKEN.
Just thought I'd throw my 50cents of suggestions in to give you something to think about and maybe incorporate into growing what you eat and eating what you grow.

You can actually leave them out for quite a while. Mine might go as much as 3 to 4 weeks before we eat them all. You can always float them to check to see if they are still good. But once you wash them or gotten them wet then you need to put them in the fridge because that removes the cuticle/bloom from the egg which is what protects it.
