    Bbq Shiitakes Sweet Corn Cake
    1# ( or so) shiitakes or any mushroom
    Olive oil to coat the pan
    1 cup water
    2 tsp liquid smoke
    Salt and pepper to taste
    Chive
    Sauce
    1 onion
    1/2 cup chilli peppers ( red, poblano etc)
    1/2 cup garlic cloves
    4 -6 ripe tomatoes chopped
    1/2 cup mustard
    1 cup molasses
    1/2 cup vinegar
    Salt and pepper to taste
    Olive oil
    Corn cake
    1 fresh ear of corn
    1/2 cup water
    1 egg
    1 tsp baking powder
    1-2 cups cornmeal
    1/4 cup oil
    Slice mushrooms really thinly. Get a large pan hot coat with oil and add shrooms. Saute for about 5 -7 minutes until they start to shrink and cook. Add the water mixed with the smoke. Cook until all of the liquid has evaporated - stirring often. Set aside
    In another hot pot add a splash of oil,
    Followed by the onions and chillis. Saute until translucent and the aromatics have started coming out. About 3-5 min. Add the garlic and continue cooking for about 1 minute longer.
    Add the chopped tomatoes and turn down the heat to about medium low. Cook together until the tomatoes are broken down and the juices are bubbling. Pour the vinegar, salt and pepper, mustard and molasses and stir really well. After incorporating turn off the heat and allow to sit a spell. Take a hand blender and puree until smooth.
    Combine some sauce ( about a cup )with the mushrooms and mix together over medium high heat. Toss until the shrooms are saucy but not too wet.
    Corn Cake
    Slice 1 ear of fresh corn off the cob. Transfer to a container add the water and puree until smooth. Add the egg ,oil and baking powder blend again. Slowly add the cornmeal with a spoon and mix well until it resembles waffle batter.
    Get a pan hot ( add a pat of butter optional)
    Spoon out the corn mix into a medium high pan, flip when edges are brown and the center is a little cooked. Finish cooking on the second side for about a minute.
    Put the hot corn cake on a plate, topped with the BBQ and sprinkle with chives or scallions as a garnish. Serve hot and as always, please enjoy.
