I love this idea with the chicken as I imagine slipping in some cheese before rolling it like that of a chicken cordon bleu. What I don't like nor would do for health reasons is to wrap it up in foil. As I understand, foil has toxins that are released into the food when heat is applied. What to do in lieu of the foil? I suppose toothpicks to hold it together and then, if wrapped at all, parchment paper is the only safe thing I can think of. I'm open to ideas.

It was painful to have to watch them ‘debone’ all 3 of them when one conveys the idea just fine… opening a package of boneless thighs woulda been awesome! Also, leave the skin on? No way when it can’t crisp up in the foil…
Leg with back attached is usually a third the price of boneless thighs, plus the added texture and the flavours from the skin. Some people are thrifty for good reason.
I’ve this method for the chicken. Primarily you chicken in to a sausage and wrap it in heat safe plastic wrap then foil then cook chicken on low and slow in water or if you have a sous vide circulator. This generally will not overcook the chicken and it will keep moist before you either bake, grill, or pan fry the chicken to get a nice golden brown colour. Overall good recipe but I’ll probably buy boneless chicken thighs and something like this can be prepared a night before.
The plastic is solely for moisture retention and protecting the flavor from water intrusion. If wrapped tightly and cooked for a minimal amount of time in the foil, it is unnecessary.
Is this a normal evening meal or a special occasion meal because WOW a LOT of time, effort, and love went into preparing those dishes. I’m hungry and tired all from watching. 👏👏
