I just made a batch of these. I was a little concerned because the batter had an overwhelming unpleasant flavor of cake batter extract and didn’t have high expectations for the baked product. However, when they came out of the oven they were delicious. I haven’t had a Costco chocolate muffin in over two years, but that was exactly what they remainder me of. Those were my favorite muffin and i am ecstatic that I can have that again. I didn’t have the wheat isolate, so used chocolate whey isolate and I only used 1/2 of the espresso powder called for. I also didn’t have jumbo muffin tins so just used standard ones, but it ended up making 24 muffins. They baked for about 12 minutes, turning half way. I figure since these were supposed to be jumbo, I can have two as a serving. = ) These were fantastic, I don’t know how you came up with this recipe, but I am so thankful that you did and were willing to share.
I've just made these, I made them into mini sandwich cakes with butter frosting in the middle and got 14 out of the recipe. They are the perfect texture and delicious. Thank you. I'll tag you in my ig.
I just made these, and they were sooo good I ate 2, shame on me. I put them in my donut molds because I was craving chocolate donuts and they tasted just like those cake donuts I love from Dunkin Donuts. I will make them a little sweeter next time like you suggested.
. U made me so excited to use this flour in my backing .but I searched here in Dubai for lupin flour but sadly could not find it. I went through most of ur recipes . Hopefully one day will do some . Thanks for sharing
I've been making my own non dairy milks and yogurt for years...also nut butters, cheese, jams and jelly...so much better than store bought and you control what goes in it.
Hi Rhanda! I use both my Almond Cow and Vitamix to make nut milks. It depends on what I’m going to be doing with the milk and what ingredients I’m using that determines which machine I use. 😊

Is there a way that I can substitute wheat protein isolate with something else? Its hard to find one in my country.
