Hey Joel, Therrol from Alaska. Made this dish tonight ( so good I’m stuffed). Used thighs cause they’re easier and I love’em. No calvados, found a nice Apple Brandy from Oregon. No crème fraîche, used sour cream. Did mash potatoes and broccolini. Just my wife and I so there’s plenty to eat tomorrow. Thanks Joel, love your dishes. 👌😎

Chef Joel- How did this dish taste? I don't know if I'd like my chicken very sweet. Did the apples make the chicken & sauce very sweet? Please let me know. If this didn't come out overly sweet I will make the recipe as is. If it was very sweet, I might substitute sweet potatoes or turnips for the apples, & hold off on the mashed potatoes for serving. Thanks.
I agree with ramaya3184. In my opinion, sweet potatoes would end up being sweeter than green apples - which are more sour and not what I would call 'sweet' apples. The apple cider, as Joel indicated must be dry...be sure to check the lable when you purchase cider.
There's not much sweetness depending on the apples you use, the green granny Smith are quite sour and work well. The apple cider is dry, so in all, it's savoury with a hint of sweetness. But if you use sweet apple cider and sweet apples then it could turn into a desert. 🤣
My very finicky Swiss French husband does not like any fruit in food dishes (baked, yes), nor anything sweet-ish in savoury foods. So, I will look for the sourest apples, trim them in a way he won't recognize and if he comments, I will tell him it is a kind of turnip.😛 Finding a dry cider (cidre) here in Spain may be a challenge, though. They are often sweet here. This will be our Sunday dish! Thanks again, Joel.

What I will do is, when the dish is finished, I will remove all the apple pieces from my husband's plate...and see what happens. Maybe leave in a few small pieces so he can't recognize it. I think leaving out ALL the apples would very much change the flavour and texture of the disgh from the original. However, it certainly will still taste delicious -ä but different - without them! I have a very broad taste in foods and a digestion of a shark. I count myself lucky. My only limitation is no insects and no reptiles!🤣

I'm on the same boat as your husband. I really dislike cooked fruit, except for apple pie. I wonder how much of a difference it is without the fruit.
