I have few quite expensive knives but in general I don't go for all of them fancy Japanese ones. If you are in that area of SG steels and so on you probably know what you need so I won't help. I have a new sharpening customer which has several mid-tier knives from Japan, I will post their reviews as I get them in my hands.
But the search for not-expensive and perfect kitchen knife is not over. Does that even exist? I am still looking.... maybe even expensive and perfect does not exist....

Yes but it is so rare to find this deal....
Do you only do cheap everyperson knife like Ikea and such, or are you open to fancier stuff like Takamura SG steel? which isn't even that fancy
