  • Hey friends! This weeks video will be a stay at home mom day in the life where I talk about looots of stuff and open up about how I'm really doing. OH and we also got rid of about 1/3 of what we own in our house. I hope you like it :)

    Sourdough Bread
    Description:
    I usually start this process at 7-8 am and cook the next night (or night after) for dinner
    Ingredients:
    500 grams purified water
    200 grams starter
    700 grams bread flour
    Directions:
    COMBINE & MIX BY HAND
    800 grams of purified water
    500 grams of your starter. (It should float on the water. That's how you know it’s fully hydrated.) Stir by hand to make a milky consistency.
    After mixing those, add 1000 grams of flour. DO NOT KNEAD. Push and around the ingredients to combine. It will be a little dry.
    AUTOLYSE & 1ST REST
    Let ingredients sit in the bowl for 30-60 minutes.
    Add 20 grams of salt and poke it into the dough.
    Stretch and fold, and sit for 30 minutes

    Cover well (so no air gets in) with plastic wrap OR put the bowl into a plastic bag and tie it off.
    Put it in the fridge and let it ferment for at least 18 hours (the longer the better).
    The next day
    -I usually start this process around 1 pm
    SHAPING & 2ND REST
    Put the sourdough on the counter, (oven or microwave) and let it get to room temperature. About 1-2 hours.
    Slowly pour the dough on the counter and cut into two parts.
    Stretch the right side out and fold it over 1/3 of the dough. Continue with the left side, the top and the bottom. Pinch all of the ends together on top.
    Each shaping basket should be nicely doused with flour to prevent the dough from sticking. Make sure that the ends of the bread are on the top of the bowl. You will plop the dough out onto parchment paper, so you want the top to be the smooth part.
    (BOWL METHOD)
    -I would gently spray it with oil and sprinkle flour on top.
    Cover and refrigerate for 2-4 hours.
    COOKING
    Preheat your dutch oven and oven to 500° in the last 30 minutes of the shaping time. (If you want to prevent the bottom of your loaf from getting too burned, put a pan underneath the pot at this point.)
    Softly plop the dough onto a parchment paper and score it.
    Take the pot out of the oven (after it has fully preheated to 500°) and softly lower the bread in with the parchment paper.
    Place pot with lid on inside the oven and change your temperature to 450°
    Bake for 20-30 minutes. (depending on your oven)
    Then open the oven and take the top off and bake for another 10-15 minutes. (until golden brown on top)
    Let it cool on a rack for about 5-10 minutes.
    MAKES 2 BIG LOAVES

    Whole Wheat Bread Recipe
    Ingredients:
    12 oz warm water
    8 g salt
    40 grams vital wheat gluten
    41 grams honey
    10 grams yeast
    480 grams whole wheat flour
    Directions:
    microwave water
    dump water, honey, salt , yeast and vital wheat gluten into KitchenAid and mix
    sit for 5 minutes
    while that is sitting measure out wheat flour
    dough hook until off all side and see-through
    let it rise in the oven four like an hour
    then shape and put in bread tin and rise for an hour (at the last 15 minutes preheat oven to 350°)
    bake for 30 minutes (golden brown)

    I like that you talked about arguing and how marriage is hard, I think that’s realistic, but I’m sure there are people who just don’t. I think the main thing is to respectfully disagree in a kind manner and learn to listen and synergize.

      And if I can go back, obviously I want to clean the floors, but never feel guilty for playing with your kids! That’s what they will remember and that’s what really matters!
