If you stop paying the subscription fee you won't just lose access to bugfixes and upgrades but you will be forced to stop using the software altogether. If Odoo will get bought by someone bigger (SAP, Oracle) and they decide to kill it (by significantly increasing the subscription fee), you will not be able to legally use the software anymore. Yes, you will have access to your data but good luck migrating it in time to something else.
