White Truffles in San Francisco!

- I was on my way to North Beach's Little City Meats and dropped into Cavalli Cafe for a quick macchiato. I was surprised to see Piero, the Tuscan truffle guy, at the kitchen sink.
They keep the dirt on them until the day they cook them. Don't worry, when they weigh it out for selling, they subtract the weight of the dirt.

I'm shooting an episode with Piero & Santo this afternoon. Another shipment of truffles just arrived from Tuscany. I'm making sautéed veal scallopine in a white wine pan sauce with white truffle shaved on top and a frittata with grated black truffle in the egg mixture. We should post the episode next week.
And then we'll shoot 3 new episodes cooking with some of the best Italian chefs in North Beach before I head to Italia next month. Stay tuned!

Ciao Anthony. Yup, they're a rare treat and not cheap. That's why we call them the "Diamonds of the Kitchen." Santo and Piero have a good price at North Beach's Cavalli Cafe. My producers are editing the episode I shot Thursday with Santo and Piero. I made a frittata with black winter truffle and veal scallopine with white truffle. We will post the episode soon.
