Another thing to love: how the love for Ikura (Salmon Roe) is universal, even Pierre likes it. Tai (Sea Bream) in Japan is often mistranslated in Indonesia as "red snapper" (Lutjanus bitaeniatus) - similar to Mexican Gulf "red snapper" (Lutjanus campechanus), "Tai" in Indonesia is definitely tastier. But as Yuki said, even when eaten at Toyosu fish market specialist sushi house omakase course - sea bream is just sea bream - without salt (like Tai meshi), it tastes like nothing but faint sea water. Another thing that needs to be appreciated is mackerels - horse mackerel, Spanish mackerel - they are just as delicious and definitely more sustainable than the famous tunas.

I am Japanese. It's easy for Japanese people to distinguish between sushi, but I was surprised to see Yuki distinguishing between otoro and chutoro.
I can usually tell because the otoro is more fatty than chutoro.
