How in god's name did Kanata get that much copper??? I haven't played Minecraft since it was added, is it like reasonably abundant?
she did grind them onstream, around 3k iirc, if she has more in this clip then she prob did grind offstream.
There are a lot of copper in that server.
you find tons of it since it generates a bit more often than iron, but also every block of copper ore you mine drops several coper ores (similar to redstone)
Also unless you plan to build something with it you don't need that much, a single stack of copper blocks is probably enough to make everything you need and have some comfortable amount left.
Thast being said the amount presented by Kanata is still impressive given the server is relatively new.
