This recipe looks delicious. I have tried many recipes from this page and enjoyed most of them. My one objection - not every dish requires red pepper flakes! I have never used them and the dishes are plenty flavorful all on their own.
Love that you can actually cut them into nice portions. When I first heard that zucchini was being used in place of noodles, I thought the final dish would get soggy and become a wet lasagna. Glad it held its shape. Will try!
The key to the texture is the thick sauce. Any moisture released by the zucchini won't be enough to thin out the sauce enough to make the lasagna soggy.

I tried this today with firm tofu and sliced mushrooms for a vegetarian version. it came out delicious!

Wow I always just thought of eggplant as a replacement for noodles but zucchini seems like a great idea! I love that it holds the shape perfectly too. I will definitely try it.

I made this its a little dry on top I recommend doing another layer of the tomato sauce but I used around four tomatoes and that made 3 cups instead of 3.5 cups so I ran out of sauce. i also replaced the turkey ground with diced portobello mushrooms and I had a lot left over so I used the bigger pieces as meat substitute and it tastes really good texture wise. I tried to make it completely vegan but I got to say only because I didn't have any of the cheese she recommended on hand. I have this holland Emra or something cheese I got but it tastes weird I thought it would mess up the taste. it's real pungent unlike the sweet mozzarella or cheddar. but I tore a little and just stuffed into in a slice of the piece of lasagne I sliced and surprisingly it's really rich and really really good! I might make another layer of tomato sauce and then sprinkle some of that holland cheese and bake for another 10 minutes or 15 min. ugh delicious

Looks delicious! I would even try subbing the Mince with some Tofu or Soya, and the Ricotta cheese with some thick Cashew cream. Yummm.

You can use red lentils instead of ground meat. I always do that for my pasta sauces.

I though for sure that the zucchini would release a lot of water into the dish while cooking. Most bake the sliced zucchini first for this reason. Anyone find this to be an issue?

If I wanted to add mushrooms to this when would I add them? Before or after the turkey?
+Joe Petri after the turkey, i would not cook them too much in the pan, as they will cook whilst baking as well. This is my personal preference; I do not like overly cooked mushrooms as I feel they lose texture and flavour.
Using too much salt isn't healthy either right?
correct. you have to be careful with how much salt you consume. It can cause dehydration and other problems but only if you consume it in excess. In this case Shira was just seasoning to her taste, remember that there are a lot of components to a lasagna so her amount of salt was reasonable. I wouldn't worry too much about salt intake but I would take notice as to how much is consumed
i think the amount of salt is alright though because the zucchini was uncooked and there wasn't any salt in the tomato puree. also it's not like you're going to eat the whole dish of lasagne right?
She uses coarse salt, which requires a bit more in quantity but is in fact healthier and lower in sodium. *And* of course the zucchinis were raw and had to be well seasoned, otherwise the dish would turn out bland.

I know, I thought the same. I use at least 3/4 cloves in a lasagna.
