    I explain why it is called gun powder. Because there is taste explosion in the mouth....IF IT IS NICELY COURSE and not a fine powder, likewise, gun powder or blackpowder must be milled into a very fine powder, but after being milled it is moistened and pressed through a sieve in order to form small balls or grains and dried, only due to this COARSENESS CAN IT EXPLODE, otherwise, it would simply burn away. Also in the past Indian soldiers had to tear open the paper cartridges with their teeth, drop the powder into the muskets barrel, then the paper, then the lead ball..some powder would get into the mouth of the soldier because the drill was doing it as fast as possible for volley fire so they compared the coarseness to idli podi

    The dry mixture should be ground bit course, then only it will be tasty and crunchy while you mix with oil.

    You can use sesame seeds instead of Basmati rice to add nice flavour which can be served with hot rice with ghee.

    Hi Varun , for the first time a recipe of yours hasn’t come out well at all . The gun powder is not the rich orange colour and neither is it spicy. I hv added more chillies too. Wonder what to do with the whole lot now ??

    Really good version. As a matter of fact here in Tamil Nadu we use normal spicy dry red chillies. We never use Kashmiri chili.

    I heard gunpowder in recipe quite stunning generally stand differently, so I keen to know the reality of the masala, wow what a punch but chilli terrifies my daughters so I will go gunpowder without chilli, let see.       You can keep this for more than 3 months without keeping in fridge . You never need to store this in fridge . It's maximum life is 1 year with out keeping in fridge.

    There's a better version of this recipe in Maharashtra called as Metkut. Conceptually this Podi powder and Metkut are the same, however, while Podi is hotter Metkut is more flavourful. I enjoy both of them equally but as I said one is hot and the other is flavourful. Both can be eaten with rice and ghee.
