A friend gave me a slow-cooker more than ten years ago and I never used it. I recently brought it out determined to try it and this video helps a lot. My brain often tells me that cooking is a pain in the ass, but when I watch Chef John make pot roast, it seems way too easy and fun! Got to talk back to those negative little imps that live in my brain.
One of the best uses for apple butter is to warm a flour tortilla, spread with a few spoonfuls apple butter, fold all sides in to close, then sauté in butter to get the tortilla a little crispy. Sprinkle with confectioner sugar and serve!

Seriously, paying full price for meat has become like pre-ordering a game on Steam for me: something that's not done anymore. Before holiday weekends supermarkets even mark down meat/poultry that's 2-3 days away from its sell-by date. Ok, so it means spending a day cooking, portioning and freezing, but the savings are noticable.
I didnt have a 7-bone but did have a pot roast. it still turned out AMAZINGLY 👏 . Ive been cooking for about 50 years now. Its refreshing to come back full circle in cooking. Thank you Chef. Bon' Appétit

Loved the apple butter! I made it with an assortment of apples a friend gave me, and canned it. I ended up with six jars, gave one to my friend. It was delicious!
I slow cooked a (incredibly similar technique/ingredients..though added some red wine the last 15 min) pot roast this past Wednesday and it was yummy. The leftovers were then made into a soup yesterday (just in time for the falling snow). I finished the soup by adding semi precooked kasha aka buckwheat groats) At first I thought I'd made a grave error as the kasha's pungent flavor seemed to overpower the vegetables and broth. After simmering for another 45 min or so, the flavors 'married,' and it turned out to be one of my best soups yet. Think I'll have a bowl now with a warm crusty baguette. Apple butter: we grew up with grocery store apple butter. As an adult, we had a home with lots of apple trees, I gathered all those dropped apples and made apple butter in a deep, heavy stock pot and canned it. As a city girl, I was agog with the heavenly flavors and ease in creating (albeit, it does take a long time). Crock pot would be a huge assist though. What a pleasant surprise to see this recipe. And YES, it is TOTALLY worth making this home made... no need for aromatherapy whilst cooking :-)
I actually very much enjoy making my own sauces and such, like BBQ sauce or ketchup, and I even get into some fun fermentation stuff like soy and fish sauce! None of it's very difficult, just often very time consuming. I'd have to say mustard is my favorite to make because of the tiny, little tweaks you can make to the process or the mustard seed/powder and get A TON of ways to make mustard

I've decided that of all kitchen gadgets, the crock pot is the one I love & use consistently. My sis gave me an Instapot for my birthday & I won't tell her, but I hate it! Everything comes out so wet. I even tried to make the brownies in the booklet and I threw it out. Reminded me of big wet mud pies we made as little kids! The crockpot is a great thing!
I love your recipes Che John and use many of them but with this you've overlooked the whole purpose of a crockpot - to set it and forget it. Busy morning households can put stuff in a crockpot, turn it on low, and forget it until they return home from work 6-10 hours later. But your method has us stirring every few hours (hey we're not home we're at work) or braising everything even before turning on the appliance - you might as well cook it in a Dutch oven on the stove. No thanks Chef John - I'll stick with my method - set it and forget it while I go about my busy life.
I have made this ketchup recipe and it’s good, not as good as Heinz obviously, but when you’re harvesting 80 pounds of tomatoes a week, it’s a great way of using them up.
@@whatshername369 I can them, make lots of tomato sandwiches, make tomato black pepper jam (excellent on green beans and Brussels sprouts) tomato soup, salsa, and Bloody Mary mix to name a few. My in-laws were “only planting tomatoes for slicing” last year and between the two households we had over 40 plants.
I totally love the ketchup making recipe! That's my fav so far! Yes, I would so totally do that which make me a nut! ;) Followed by apple butter OMG! It took me forever to find an apple corer. I gave up and ordered online because no grocery stores had one. Oh no you didn't peel the apples? I hate apple skins mostly because they are waxed! Granny Smith are my fav, too! Learned to eat fresh sprinkled with salt and dipped in peanut butter from my mother! She also did them cored and stuffed with butter, brown sugar, and pie spice and baked in the oven in the winter! Makes the house smell so good and such an easy winter treat! Bake at like 375 / 400 for 45 min to 1 hour. Eat! Oh huge fan of an immersion blender! Very space efficient!

I wonder why pork pairs with fruit so well, maybe better than any other meat. I’ve enjoyed it with apples, persimmons, pineapple, pears, and berry reductions. Anyone else have fruity ideas?
growing up i couldn't stand pot roast because it was so flavorless, but now that i realize my mother never seasoned it or seared it before throwing it in the oven with carrots, onions and potatoes i feel like maybe i could make a pot roast that i enjoy
The Pork roast can be substituted with pork ribs, cook until tender, and remove the ribs, reduce the pan juices, ad a bit of apple cider vinegar to add a bit of tang, grill of the ribs, and glaze them with the sauce. Ketchup: try different vegetables, traditionally ketchup was made in a huge number of varieties, with just about an vegetable you can think of. Carrots, are good but you can use jut about anything. Like chef said, why would you make tomato ketchup, you can buy very good versions. But varietals with other vegetables and even fruit as the base. Apple Butter: Add onions, and far less, or even no, sugar, and you end up with an apple ketchup. Adjust the tartness with a bit of apple cider vinegar.
I would like to add that in an Austrian goulash (which is very different than a Hungarian one) you don't sear the meat first, just the onions and it tastes amazing when made in a slow cooker.
Pot roast without potatoes? I guess mom used to stretch our food quite a bit when I was growing up. "Pot roast" was 20% beef, 80% potato/carrot/onion/celery.
Hmm. I usually put potatoes, carrots, celery, garlic,mushrooms, a can of crushed tomatoes, a good squeeze of Sriracha, salt and pepper, and half as much chicken broth. 😋

I made the apple butter in the day, in a sauce pan, cooked a day and a night, was so worth it, ate with scones and also cold meats. So good.

That’s a good tip. I will definitely keep an eye out for marked down beef for that beef roast.

I preheat my crockpot with a little water first, I also sear the roast on all 6 sides using to scissor tongs for a nice char 😋
