That's because East Asian bowl design is cleverer. They make a shallow foot rim at the bottom of the ceramic bowl. So you can just hold the edge of the bowl with your thumb at the top and the rest of your fingers goes under supporting the foot rim which remains cool and doesn't become hot! The Western bowl doesn't have the shallow foot rim at the bottom, so the entire bottom heats up hence you can't hold it in the same way.
