Čvarci, my favorite snack. The real thing...unlike the cardboard tasting stuff they sell in USA, called "Pork cracklings". Every piece of Čvarci has a bit of skin, bit of meat and a bit of fat. It tastes amazing... Also, using this lard for baking will also make things taste great, from meats to cookies and cakes. Home grown pork and pork fat are very healthy. Our bodies know exactly how to process them. Stay away from man made fats and man made oils.

Čvarci, in Czech we call them škvarky. I made it once. It is fairly hard work cutting all that pig fat. Hands are as smooth as afterwards after touching all that pig fat. On the bright it side is probably healthier for the kids than chips. Europeans definetly know how to utilize every part of a pig....

It looks delicious: cvarci, sausages, liver, fritule... I remember how my mother use to make liver, she would soke it in the milk to lose a little bit of bitterness and then you put liver in the flour before cooking it. To make the best cvarci every household in Croatia has their own recipe, it has to be cooked for a long time and just before cvarci are red you pour some milk in it. And after they are done they need to be squeezed to get them right, there are different tools used for this purpose. One thing missing on this video is how to make "krvavice" -blood sausages, it's the end of the whole "kolinje" process, all the rest of the meat is cooked together , mixed , like regular sausages, add blood, seasoning , mix, make sausages and you cook it in the oven.

The fat has been melted on the stove and then squeezed out so now what you are left with are the fried fat cells’ membrane tissue, with just a little bit of fat left. If pressed even harder, with a stronger press machine, all of the fat would be squeezed out and cvarci would become completely flat and dry. Fried cell’s membrane tissue is very crunchy, like chips, and tastes delicious. So Sarah don’t be afraid to eat cvarci as they are not fat. Fat has gone out of these cells and it is now in these buckets.

I think you need to start eating čvarci early in life to get used to it. I still get a cringy feeling at first bite, but after that it's like eating chips. They are the best when fully dry :D

Cvarci are amazing but additive and obviously not the best for you …. Interesting Ivan was using a potato masher for the press. I have used the old wooden and mesh presses much like a large garlic press and also seen more large scale spin presses like a grape press .. fun process and the neighborhood comes running when they get the scent . Sarah why are you so reluctant to try ?
haha. I'm Croatian and I don't like čvarci as well. Whole process and knowing that is fat turn me away from them. Though I ate them as kid, grandpa fed me with them 😁
pa jedno je sasvim sigurno a to je da ova tradicionalna hrana NIJE razlog tome ! ovo su spremali i jeli nashi stari vijekovima i nisi mogao vidjeti debelog covijeka . tad nisu posle ruchka lezali na kauch " naoruzani " sa 3-4 daljinska upravljacha vec su isli neshto radit ( kopati , sijeci drva , orati i.t.d. ) pa su troshili sve te kalorije koje nashe tijelo vishe treba u zimskome periodu . a sada samo u jednoj chashi Koka Kole ima 6-7 kockica shecera , chips , red bull,majoneze , pizze , hamburgeri , sve je to smece , nezdrave masti , sheceri , uzas !
Sve je okej ali tužno je malo da baš niste sigurni o čemu pričate. Problem sa našom generacijom ( a to i vi spadate) da vam starog nema plakati možete... pojma nemate i svemu se čudite
mislim da je ideja da se zapadnjacima (Kanadjanima) pokaze kako stvari ovdje izgledaju. Bez ljutnje jer oni to zasluzuju. Kad je video na engleskom- razgovjetan je milijardama ljudi.

Mlijeko ide da čvarci dobiju boju a ne da budu ovako blijedi! I cijede se odmah kad se vade i stave na papirne vreće da se ohlade! Barem u slavoniji..
U zagorju se ne stavlja mlijeko, a čvarci se u pravilu vade direktno u ručnu prešu za čvarke i odmah se prešaju iznad "banjice za mast".

Cvarci are amazing but additive and obviously not the best for you …. Interesting Ivan was using a potato masher for the press. I have used the old wooden and mesh presses much like a large garlic press and also seen more large scale spin presses like a grape press .. fun process and the neighborhood comes running when they get the scent . Sarah why are you so reluctant to try ?

haha. I'm Croatian and I don't like čvarci as well. Whole process and knowing that is fat turn me away from them. Though I ate them as kid, grandpa fed me with them 😁

pa jedno je sasvim sigurno a to je da ova tradicionalna hrana NIJE razlog tome ! ovo su spremali i jeli nashi stari vijekovima i nisi mogao vidjeti debelog covijeka . tad nisu posle ruchka lezali na kauch " naoruzani " sa 3-4 daljinska upravljacha vec su isli neshto radit ( kopati , sijeci drva , orati i.t.d. ) pa su troshili sve te kalorije koje nashe tijelo vishe treba u zimskome periodu . a sada samo u jednoj chashi Koka Kole ima 6-7 kockica shecera , chips , red bull,majoneze , pizze , hamburgeri , sve je to smece , nezdrave masti , sheceri , uzas !

Sve je okej ali tužno je malo da baš niste sigurni o čemu pričate. Problem sa našom generacijom ( a to i vi spadate) da vam starog nema plakati možete... pojma nemate i svemu se čudite
mislim da je ideja da se zapadnjacima (Kanadjanima) pokaze kako stvari ovdje izgledaju. Bez ljutnje jer oni to zasluzuju. Kad je video na engleskom- razgovjetan je milijardama ljudi.
