Shrimp Tempura From Scratch - for sushi rolls or just to enjoy as delicious tempura

  • I will show you how to prepare authentic shrimp tempura for sushi. This video tutorial will show you how to prepare the shrimp, make the tempura mix from scratch, and fry your tempura in oil to get the lightest, crispest result.
    And lastly, a dipping sauce in case you wish to enjoy your tempura as is without using it in a sushi roll.

    a pot of refined sesame seed oil
    3-5 tbsp toasted sesame seed oil for flavour geni.us/sesame...
    shrimps
    batter:
    100g cake flour
    200ml ice-cold water
    1 egg yolk
    some ice cubes
    Tempura dipping sauce (Tentsuyu)
    400 ml primary dashi (400ml water + konbu + katsuobushi)
    66g mirin
    53g soy sauce

    daikon

    Sir, what kind of flour? I was reading corn or potatoe or mix, what you recommend?

      cake flour, we want the least gluten development, so cake flour has low proteins which means less gluten plus it is usually milled to a finer consistency which is great for tempura making.
      you can add a little bit of starch to make it a little crispier, like 1 tbsp of any starch (corn,potato,rice), but its not necessary.

      @@hallobre yes you can get special tempura flour packs and then no need for egg, those are pretty good, to be honest.
      but its always nice to know the old school way to make tempura

    For the neutral frying oil, I don't have refined sesame oil, is rice oil OK?

    Hi senyor, is refined sesame seed oil different from ordinary sesame oil (light colored compared to toasted sesame oil normally used by Koreans)? I was just worried using ordinary sesame oil since it has a low smoking point. (This is actually the first time I heard about refined sesame oil.

      yes non refined sesame seed oil has a lower smoke point around 177C, but as soon as it starts getting refined its smoke point goes up fast, like a semi refined sesame seed oil is at 232C

      @@MakeSushi1 wow, thanks for the info. Here in the Philippines, regular sesame oil is well, regular. Some are even mixed soybean oil. Still pungent but less expensive. In the international aisle, we have the toasted ones from korea and japanese sesame oil. So I was surprised that sesame oil also has the semi/refined variety

      refined sesame seed oil is very hard to find in Spain, better to just go with a substitute, like grape seed oil or refined sunflower seed oil.
      toasted sesame seed oil you can get anywhere these days, but if you're having trouble you can find it in hipercore at corte ingles or a Chinese grocery store, also mirin can be found in the Chinese grocery store.
      You can get kombu, mirin and katsuobushi in the grommet section in a corte ingles, its usually separate from the hipercore.
      Daikon, I usually get mine in Alcampo.
      hope this helps.
      lastly, there are Asian food wholesalers in most major cities, you usually find them in the poligonos they supply restaurants but you can ask them to buy and just get a ticket instead of factura.

    Doesn’t look crispy dry as Japanese authentic tempura….we in JPN use RICE BRAN OIL for Deep fry. Cold pressed and 100%pure rice bran oil is 100%vitaminE. Though many company uses synthetic oils. Oxidized bad kind. Rice bran oil is very hard to oxidized. Best for temperature cooking as Tempura .
    Sesame oil is very quick to be burned. Some Tonkatsu bar uses half sesame and half Rice bran but extremely low temperature to cook so long.
