  • Kvass (called Gira in Lithuanian) is a wonderful, flavorful, probiotic beverage common throughout the Baltic and Slavic world. This is the most basic recipe possible, and you can add fruit or raisins, herbs etc.
    Also as a correction to the video I think the boiling effect on the water when the bread is added is likely due to the water being superheated.
    Recipe:
    ----------------
    500g/1lb heavy rye bread
    200-300g sugar
    1 packet active dry yeast or a spoonful of the lees from the previous batch
    6L or 1.5gal water
    Dry bread thoroughly in oven and toast until fairly black. During this process boil your water and remove from the heat. Add the bread and sugar to the water and leave covered to cool overnight.
    Strain into another, non-reactive (stainless steel, glass, or unchipped enamel) container and add the yeast or lees. Allow to ferment covered for at least 8 to 12 hours, preferably for a few days before transferring to the fridge. If you like it bubbly store in plastic soda bottles with tight lids once fermentation is mostly over. If you prefer a less bubbly becerage, just leave covered.
    You can keep it covered with a cloth, lid, etc. Unlike beer this does not need an airlock system.

    Chris, how about trying okroshka? This is a Slavic summer soup, seasoned with kvass / water / whey / kefir.

      Hi. I plan to focus on summer soups for May and Okroshka is on my list!
