    Just finished up smoking my first turkey breast; it turned out very good and tastes great. I did make my own brown sugar cure. My smoker is a recycled 40-gallon hot water heater and a cloned Smoke Daddy. I need to get a small electric hot plate since controlling the temperature was difficult using the propane burner. I have made cold-smoked hard-boiled eggs a couple times and they are good also. Thanks for posting your video!

    Larry I tried this with a chicken. I don't have a smoker built yet so I have to improvise. I make my own sugarcure. I used a nice plump frying chicken, mixed up the cure as you said, injected it with a much smaller needle. I then stuffed it into an oversized Folgers coffee can (plastic) added some liquid smoke and let it sit for 24 hours. It was only 5 lbs so I thought that would work. I rinsed it, let it drain and then stuck it in the oven on 200 for 1 1/2hours, then uncovered it, turned up the heat to 350 to finish. It was very good! Definately going to do this with my Turkey this year!

    Finally! Another Maestro.My Father and a friend used to smoke whole turkeys once a year.And I knew a butcher from Indiana, with his wife from Hong Kong who used to do them for special customers each Thanksgiving. Smoked chicken and turkey were popular in my home state in the 1980's with the yuppies, and then I don't know what happened...Now, just like you said; you have to get them through mail order.Thanks for the upload and lessons.

    Hey Larry, great video! One quick question. When you cure these and smoke them, how long will they last?? Are the like a salt cured ham that lasts years without refrigeration? I am new to curing and smoking, and I am a little confused. I watched videos of older gentleman preserving hams buy salt curing and smoking them. They last years simply hanging in a basement. Is this the same process? Thanks!

    Larry; Got a few questions about the Brown Sugar Cure for the turkeys. Does the Brown Sugar Cure contain Nitrite? That the PINK GLOP they mix into fast food shoP burgers? Instead of a Cure and Water mix have you ever attempted Cure and Apple CIDER (not juice)? If so what was the flavor out come? My Dad was an FDA Certified Butcher/Meat Inspector, when he was alive, and he did a mix for hams and sausage meats (pre grounding) with a cure he would bring home from work and would mix it with Brown Ale. Have you ever tried that mix and what was your outcome, recommendations, & taste advise. Please write back?

    Great video! Very instructive! Love it! So sweeter than sweet cure would work too right? I know it works well for our bacon! I also use a stainless steel meat needle for this ...one needle had several holes one only one and looks identical to yours only steel , it works great and will last forever! I use it all the time for making dried venison!

    Larry I wanted to let you know what I did last Thanksgiving. My son made a smoked turkey. I took the bones and skin home and put them into a large stock pot filled with water. I boiled it and made a smoked turkey broth. Then I canned this in quart jars. I can't tell you how amazing this broth is.

    Hi Larry.....I am using a charcoal grill with a side smoker attached. looks like you only use apple and hickory wood. I have 2 questions, 1. I have a 1 bag each of apple and hickory wood chip 180cm each. I have been unable to find the chunks right now.....will the 2 bags of chips be enough for my 13lb turkey? 2. I have only used chips with Charcoal, if I am only using wood, what is the best way to light/use the wood in my side smoker?

      No it is not the same! Find any local butcher who makes their own bacon and hams they will have the brown sugar cure!

    Great Video, this is what I have been looking for, the old fashioned way to smoke meats. Thank you so muck and BIG KUDOS on that smoker. I built one out of a propane grill added a fire box to the side of it. Keeps great temps all day. Thanks for your recipe

    Does your smoker have a water scrubber? If not you might want to look into wood gas. When you heat wood up it produces volatile gasses and tar. A water scrubber reduces the tar. I have heard you can also use wood shavings as a filter medium. The smoke would go through that in a second container.

    Hey Larry….in from Puerto Rico living in Virginia Beach,Virginia.My family have a Coffee Farm for like 3 generation,we do a lot sausages,we scarify pig,bull,chicken,we make "Paella from Spain recepies"…you name it.
    BUT we don't smoke,i hope to start smoking very soon.Thank you for a great video.

    Today is Sunday before Thanksgiving. I have two breasts that I had thawing in my fridge and they thawed faster than I expected. I didn't feel safe leaving them thawed in the fridge too long so I did my cure Saturday, yesterday morning. Is it ok to leave it curing until Thursday morning? If not I'll have to take it out, smoke it early then have to reheat it on Thursday. Hope you reply. This video was what I used to smoke my first turkey a couple thkgvgs back and it was amazing. Now whenever I don't make it people are disappointed lol

    Larry, love this process and that is what I want to do, but I do have a question we have a 27lb. turkey my wife wants more traditional and I want the other is it ok to cut turkey in half and do both ways or is it better to do whole turkey while smoking. I don't want to mess up smoking it .

    No room in the fridge? No problem! It's winter here in thenorth central Midwest. Keep it in a cooler out on the porch or even garage...so long as it's still staying about 32 degrees F or less. I've done a couple on my Webber grill several years ago. Time to do it again!

      Sorry to heat that! Next time when you take it out of the brine soak it in warm water for and hour!     Wow Larry those beauties look the business. Wondering if Bradley's sugar cure will do the job? Over here in UK it's impossible to buy cure from the butchers .How do you clean the gease in the smoker after hot smoking or do you let it burn off ?

    I use Mortens Teder Quick. I do turkeys and whole chickens. Can add apple cider, maple syrup, garlic. You can try all kinds of things. I use a smoker to cook them. 225 degrees for how long it takes. Whole chicken will take atleast 6 hours.

    Very nice video. My only question for a person who lives in Florida is where do you get the brown sugar cure. I have asked here at 3 shops that I know that smoke their meat and could not get a straight answer. Living in Ohio I have smoked sausage by the ton but never had a use for the brown sugar cure, I can't even get casing here or at least have someone tell me where to get it.Any help would be appreciated.

    Larry, do you have instructions on how to turn a fridge into a smoker? I have found a few in my area at the thrift store that I would like to purchase and turn into a smoker. I am sure the insides and compressor will need to be removed.

      Add a water pan in the smoker while smoking it will help keep the turkey moist!

    Is it possible to make your own brown sugar cure with 50/50 dark brown sugar and kosher salt?

      Stick with a commercial cure! It is what butchers use!
