Hi there, just came across this cake, it's awesome! Would like to make it for my son's 4th birthday. Just regarding the recipe for the chocolate buttercream. Is there a variation I can use that also includes melted milk or dark chocolate? I would really like a strong chocolate flavour hit to come through, though obviously not too much! Thanks so much for sharing!
Hi Jaclyn, I would suggest ganache for a strong chocolate flavour and it's absolutely delish. Ganache is a mix of chocolate and cream. When I make ganache I use 2.5:1 ratio of chocolate and double cream (heavy/whipping cream in US), e.g. 100g cream to 250g milk or dark chocolate. Microwave cream in a bowl or heat in a pan then when it starts to bubble remove from heat and pour over chocolate, leave for 5-10 mins then stir extremely well until all mixed together (if you have some choc pieces that wont melt just pop in microwave for 10 second bursts & stir well), leave a while to thicken, then use as you would buttercream/frosting. It will set a little firmer than buttercream which can be helpful when making 3D cakes. Hint & tip when making ganache crack chocolate into the smallest pieces you can so it melts easier, I often put mine in a blender or bash with a hammer in a zip lock bag. Hope this helps & happy baking :0)
Oooops Rebekah, I should have gone to Specsavers ! ! The cake was for my nephew and luckily he didn't notice as he was thrilled to bits with the cake. Thanks for watching and have fun making the cake :0)
+Ashley Armenta Hi Ashley, the cake is standard chocolate cake but pound cake would be absolutely fine for this cake. Have fun making your son's first birthday cake and thank you for watching.
