great video and a good recipe but yes there is a but.... the searing absolutly cannot be left out one huge point for doing so is to prevent the beef from basically coming apart during the long slow cooking process. sear your meat people its been done for generations for a reason.
While searing meat does help develop flavor and texture through the Maillard reaction, it’s doesn’t really do much else. The meat falling apart has more to do with the temperature that the meat is cooked to. Once beef reaches an internal temp of 205 degrees, the connective tissues break down and the meat falls apart.
