I returned just a week ago from Isola di Salina, Sicilia. Before boarding the ferry, we had dinner in Milazzo. I had cod ravioli - the pasta was black with squid ink! Delicious. Also, I haunt the grocery stores and markets for pasta. Brought back a kilo or two of my favorites. Much cheaper and higher quality than we can get in the U.S. Love your work, Irene!

I use to cry like a baby after spending a month there. It’s a beautiful country. And the food is excellent. Lovely hot weather. Unlike England. I was thinking of products like Simmenthal, Chinotto soda, tripa, lampredotto and any foods that we don’t ever see here in the USA. Maybe you can explain how each item tastes. Just an idea. Or maybe do a taste test and explanation of all of the pastries in Calabria. I have never been to Italy but my family is from Lungro in Cosenza and Campobasso. My nonna always told me to wait 30 minutes before going swimming. Thanks for sharing. ❤

Ecco un trucco.. When you have a super hot plate of pasta, any kind will do, you take cold parmigiana from the fridge and you put a lot on like la tuna mamma did in a previous video.. This way you can eat super hot pasta and use the cheese to offset the temperature! It’s also a great excuse to use so much beautiful parmigiana!

We too grew up with the belief that for an hour (not three) after you eat you couldn't go to swim. I guess it had to do with fear of blood glucose going down rapidly but I never exercised such belief on my daughters. Your dad is so sweet!
According to Ayurveda, One mustn’t bathe atleast for 2hours after having a meal as it affects our digestion adversely . So ,Italian moms are right as they have acquired this piece of knowledge from their ancestors. By the way, this my first viewing of your channel . Reminds me of Chef David Rocco when you were having Pasta. I love Pasta and Pizza a lot. Italians have lot of similarity to Indians.

My daughter gets educated to sea recue lifeguard. They teach her to don't swim without eating. Because they need energy for their job. But they also taught her to not swim in the first half hour after eating. Also they shouldn't eat to much before swimming. Its because cramps I believe

They say that in the US too, its because you can get muscle cramps while swimming which can cause you to drown.
