Sauteed mortadella is delicious, you can do the same with a lot of deli staples. Sauteed kabana slices are a tasty bacon substitute in pasta etc. love the vibe for these. And Andy stay strong mate.

What's crazy is a couple of videos ago I asked about if Andy had any celebrity chef inspirations, and mentioned Tony Bourdain was mine - and here we are with Tony's favourite sandwich! Definitely one of my favourites as well, though I often add some pepper and a nice onion jam as well. If you're doing pop-ups, love to see you come to Adelaide. A friend of mine and I are huge foodies and eat our way around Adelaide once restaurant at a time so an Andy pop-up experience would be wonderful.

Our family Christmas lunch is griddled maple smoked gammon and cheese with 2 or 3 picles and 2 or 3 salads. No roasting anything No hours and hours of work in the kitchen Just tons and tons of family time.

That was fun. Fried bologna (boloney) sandwiches are a fav from childhood. I mix my Miracle Whip Salad dressing and mustard together, though. Ohh, I love them. I don't eat them very often but when I get hungry for one, every now and then, it always brings me joy to eat it!
My grandaughter (in ACT) still has two school days left. Then we'll drive to Canberra and pick her up, and bring her back to help with construction and decoration of the gingerbread house (all the parts of which, i baked yesterday)

If you take meat out of the fridge in advance, use your meat thermometer. It takes WAAAY longer to 'come to room temp' than most folks realise. Im convinced that most chefs are just parroting the rubbish they were taught as apprentices

I'm sure I saw somewhere that traditional Mortadelo has pistachio in the meat giving it a very different taste to other deli meats.
Mortadella de Bologna sometimes has stuffed green olives, or pistachios, or black peppercorns, but always has cubes of pork fat
