I’ve still not brewed for Christmas although I do have 1/2 a keg of coconut stout left which will last me over the Christmas period. As I’m working Christmas Eve day,Christmas day night and New Year’s Eve night but don’t feel sorry for me I’m drinking Boxing Day after I get up after the night before and off the next day. Those beers look lovely,pleased to hear Rob’s has rounded out. I’m going to brew my first impy stout for next Christmas and get it brewed early and bottle it ( any advice greatly received 👍.) I do love seeing all 3 of you in one video very entertaining cheers 👍🍻
Nice! Love a long term brewing project - in terms of advice, get it brewed and as soon as you're done with fermentation, get it off the yeast! Will you be aging it in a keg (I would)? If so and you want to add wood, put the wood chips in a mesh bag so you can take the wood out again once it hits where you want it to be in terms of flavour.
I have my pumpkin (vanilla, cinnamon and lactose) ale ready, used kveik and pressure.... It was done within a week! But wit your tips, I can brew another batch🥳🍻
Cracking video. Out of interest what pitch rate, ferm temp and nutrient qty (vs regular ale yeast (eg 2x)) did Martin use? I have struggled to get a very clean flavour from the ‘clean’ Kveik yeast varieties.
Which dark rum did you use? Have just ordered the kit and not sure whether to change it up a little and use a dark coffee rum or just a plain dark rum.
It could be fermented in once, yes. We don't advise opening the Pinter though after you have added the yeast as the CO2 inside is what then carbonates and dispenses the beer. Perhaps add the vanilla at the same time as you add the yeast rather than after fermentation or just omit the vanilla and rum as it would still be a lush beer. The recipe kit is for a 23L batch too FYI
So, after chatting to those lovely chaps at TMM I'm going to swap the Warminster Low Colour MO Malt for Simpsons Low Colour MO and get this brewed this week so it's ready in time for Christmas ⛄🎁. I'll post back in due course.
Update on Rob’s beer. A further week in the keg and the beer is transformed. Smoothed out, the head is tight and lasting, actually it’s delicious!

I found a similar thing with the Good Chemistry ESB. It was too bitter when younger but now it's matured it's an absolute banger.
Ordered the porter kit today! Can't wait to get it brewing!

Great vid and a really nice touch that Rob didn't feel his stout recipe was up to scratch yet (just rebrand it as a cascadian dark!)
After a week in the keg, it's really smoothed out now! That brings it to just over 2 weeks since brewday, still super fast!
Damn it, I thought I was done for brewing this year... Might have to brew another couple of beers before new years now! 😂

Hey, he added a single pack of High Voltage to this 20l batch - he also doubled the nutrient amount.

Also did you cold crash the porter before kegging?
It was Mount Gay but you could achieve similar results with some shop bought vodka and one of the Still Spirits Rum Flavouring.
We just turned off the heating for a 24 hours as it was baltic in our warehouse!!
