I'd say you are onto a good start, but if you are using such a flat profile to start with, you'd need to put in a great deal of color correction in post. For me, I use almost the same settings, but not -1 sharpness. I then color correct each shot, before using various LUTs to finalize the color profile. Try and get comfortable with the color correction part, then experiment with some LUTs on top of that, for the best results.
