The ESC you replaced is for yaw and roll, pitch one is with the IMU board behind the camera... You were just lucky that you got the matching ESC otherwise you need to put the bell from the stock motor or try a couple of yaw motors to match your ESC board as these boards are programmed to match the orientation of magnet in the bell of motor.
Also, the reason for this issue is because the yaw motor is calibrated to be centered for the yaw motor that came with the drone, which is based on the magnets in the motor cap. If you replace the yaw motor and you do not use the stock motor cap, the chances of you having this issue are high. Now, the solution to this can either be that you replace an expensive ESC, or you press off the motor cap from your old motor, press the one off the new motor, and press the old one on the new motor. It takes 5 minutes and costs zero dollars. Alternatively, an authorized DJI center (if you have any) can program the motor to be centered. Finally, you can do this.
When your working with the boards you should always use gloves for statistic ele. if you don't you can short the board out you also should have a grounding strap on

rustler08 I tried changing the cap but it didn't help me.
No need to change motors! Just rest the drone on rear motors facing camera upwards and do a gimble calibrration! Thats it
