Blind Chef’s Grind Garfish Balls preparation

  • Hello there everybody, it's Zeke the blind man coming to you from the Louisiana wild side. LOL. Today I'm showing you how to prepare garfish that has been grind up to make garfish balls. This is not everybody's favorite fish but a lot of us love it in Louisiana. This was a 110 pound alligator gar fish that we caught in Hackberry, Louisiana. A fish that big can be prepared in so many ways. A garfish roast, you can fry it, you can smother it, you can make gar fish balls, and you can grill it. I hope you all enjoyed the video and I will post me cooking it also. This is part one.
    Ingredients: 3 pounds ground garfish, 2 medium boiled mashed potatoes, 1/2 Cup breadcrumbs, 2 eggs, 1/2 chopped Red bell pepper, 1/2 chopped Green bell pepper, 1/3 Cup chopped parsley, 4 cloves finely chopped garlic, 1/3 cup chopped onion, 1 cup chopped green onions/scallions, 3-4 teaspoons of your favorite Cajun or creole seasoning, 1 1/2 teaspoon white pepper, 1 1/2 teaspoon black pepper, 3 teaspoons onion powder, 2 teaspoons garlic powder, and 2 teaspoons lemon pepper. Roll up a small sample ball and fry it or bake it to make sure that it is seasoned to your liking. Use an ice cream scooper to scoop your balls so they will all be the same size. Roll and place on a tray.

    Hi Chef Zeke. I had the pleasure of making this meal with you today. I used choupique instead of gar and when I tell you this was some good eating. Oh My Goodness. I am from Houston, Texas and I never heard of choupique or gar fish, not alone eat it. My husband is from Louisiana and he taught me how to fish. I made these and I followed your recipe to the tee. The flavor was awesome. I also made a side of mash potatoes and had half of the balls fried and the rest smothered in gravy. My husband loved it!!! You're so hilarious and I can feel the love as you cook your meal. Please don't stop uploading your recipes and videos. It's very inspiring and encouraging me to step out of my comfort zone. Great job Chef!!!

    I found your video, because when I was a kid my grandmother made gar patties and I didn't know how she made them. She has passed away and this past weekend me and my son caught a nice size gar and I need a recipe. Thanks for the recipe.. I just want to say also you are a great inspiration to everyone, no matter what we have to deal with we can find a way to over come. Thanks again.

    I was getting annoyed cause the way you were not stirring the ingredients in the gar but finally heard you say blind. Well it does sound good, so im about yobtry your recipe

      Thank you for your patience. Yes I am totally blind. Also when I do garfish balls or meatballs, I do not like to over mix. It will make the meat tough. So I preferred to put some of my ingredients in all at one time then stir or mix. Thanks for watching and I hope you get to make this recipe. Very delicious.
