Here's an acoustic guitar tutorial for how to play 'One' by U2!
This song is very accessible for beginner and includes NO barre chords (woop!). However, there are some tricky bits including the strumming and chord embellishments that may take longer to get down, but are essential techniques for progression on acoustic guitar.

You could start by writing a few songs or riffs, maybe just record them on your phone, and post them somewhere looking for other musicians to fill the gaps, or contribute to them creatively! :D

Yamaha produce good guitar, also ephiphone are good for the money
+1 for Yamahas, they have a very understated look but are always exceptional. Take a look at the FS800 and FG800.
