Ilse's notebook is a damn good and well put together OVA, probably the best of the whole show for how relevant it is.
The titan was tearing its own face in an attempt to control the urge to eat her. It didn't want to do it, but instinct ended up overpowering its consciousness.
Fun Fact:
The opening "Feuerroter Pfeil und Bogen" was used because, chronologically, this chapter is located within the Battle in Trost Arc.
Because the special chapter, Ilse's Notebook, is quite short, the OAD had to be lengthened, increasing a greater number of scenes that do not appear in the manga, among the main ones are:
In the manga, Ilse's body was not found inside a tree.
The titan that murdered Ilse was never seen again, while in the OAD he was killed by Levi.
In the original version of the manga the only characters that appear are: Ilse, Hange and Levi.
In the OAD a greater number of characters make their appearance, such as: Mike, Auruo and Petra.
It is also discovered (or affirmed) that the titans do have intelligence and common sense, to the point of being able to speak politely (in this case to Ilse, confusing her with Ymir).
In the OAD, Auruo's scarf (similar to Levi's) does not appear. It is implied that in the other episodes he uses it because Levi saved his life (as well as his expressions and attitude).
In the OVA, the events of the exploration mission in which Ilse Langnar's body is found are set in the year 850.
However, in the Attack on Titan Guide, these events are placed one year earlier, in the year 849.
Let me complete it. So, first wall fallen (Shigansina) was in 845, then the 2nd attack (and Eren titan revealed) to the end of Season 1 is in 850, and this Ilse's notebook founding was just a year before that, which was in 849?
And I think when Hange says the last titan captured alive by them was 15 years ago, she does'nt mean her and her current squad + Erwin who caught it, because I think they would be still too young at that point (it is said that Hange is even younger than Levi, right? And Levi just on his early 30 at this point), so she just refer to the Survey Corps before them?
Is that all right?

i think the titan was ripping his skin off trying to hold his ''titan instinct'', but its was too strong and ended up killing her. Thats why he dont finish to eat her body, maybe they are only attracted to living humans?
The skin ripping happened right after ilse ordered it to die.

Levi No Regret also from manga, is'nt it? I'm not sure about the others because I only watch the anime version. Or do you mean ilse's notebook is the only one that is being a part of the main chapters in the AOT manga? unlike Levi OVA manga version that's released separated from the main chapters of AOT manga?

Isayama actually released this chapter right after Eren closed the Trost hole with the boulder, so we were meant to have this info before the Female Titan arc. It just lets you appreciate how much planning went into this show
