Erich Weiler Hi Erich! Thank you for your nice words. Here it’s very tough as it surely is also in America... many people died and are still dying and we are all cooperating to make it end soon. I haven’t left my house in the last month. The whole world gotta be united and cautious right now! That’s really cool news, opening a pizzeria is something that I’ve always fancied too, I think it’s a really fun and also quite profitable activity to have if done well! And it’s nice to see our traditions being appreciated in the United States :) All the ingredients you mentioned are fantastic, they’re the stuff that top tier pizzerias use here. About Roman style pizza well it is... something really delicious hahah! It’s basically a very particular type of pizza that they make only in Rome or near. The most notable aspects are that it’s way thinner than Neapolitan, it’s more uniform (as often it’s made in large rectangular shapes which are then cut into square portions, this one is the “street food” version) and.. it’s CRUNCHY. It’s very very crunchy and personally I go crazy for it, whenever I go to Rome I fill my belly with it (together with all the spectacular food they have there) 🤣
@Erich Weiler Man, I'm really moved by what you just said! I didn't know about this. It's a gesture that really shows how much you guys are truly kind people. Italians and Americans are always brothers. Yeah fortunately getting food and water isn't a big problem because at least the food stores are open. In supermarkets they let only a small number of people in at a time to avoid the risk of infections. I know Enzo. I love watching food videos on youtube so I must've seen a few videos with him. Check out also Gino Sorbillo, he's the owner of the most famous pizzeria of Naples. There's also the Antica Pizzeria da Michele, a pizza shop open since 1870. I have relatives that live in Naples so I've been there multiple times and the pizza in that city is like heaven.. it's like something from a different planet really... Compared to theirs, the pizzas from the rest of Italy are bad, so just imagine. You know, I honestly don't know much about brands of mozzarella.. the buffalo mozzarella is something I eat once in a while, maybe also given that I live in the north of italy where there are other culinary traditions. In fact I have it mostly when I go in vacation in the south or when I visit Naples, and I buy it in small family owned shops. But I can tell you to look for the "protected designation of origin" sign. it's a certification that it's used in the EU to distinguish the products that were really made in the geographical environment to which they refer. For example our wines and a lot of other good stuff. I believe it's reported as "D.O.P" in the italian products.
