The scene you were thinking of when Sanji got sent flying by S-shark was a filler scene. In the manga Sanji just does one attack on him and S-shark goes flying and then S-shark starts attacking the rest of the crew.

This signifies him utilizing his Germa Modifications. It was the same when Queen's sword broke on his face and when he used Ifrit Jambe the 1st time. Its why he did much more damage to S-shark than last time. He is quite literally BUILT DIFFERENT this time.
My Top 4 Wano fights (I am a zoro fan) 1. Luffy vs Kaido 2. Sanji vs Queen 3.
