Great camera collection..I have a fascination for old film cameras but I gravitate towards 35mm film SLR's: I have a nice little collection sitting in my display cabinet: Nikon F with 50mm f/1.4 lens both circa 1971, Nikkormat FT2 with 50 mm f/2 lens circa 1975, Nikon FM circa 1980, Nikon FG circa 1985, Pentax Spotmatic with 55mm f/1.8 lens circa about 1970, and an Olympus OM-10 with a Zuiko 35-70mm zoom lens. Plus additional lenses and accessories. And they all operate fine. The only one I bought brand new was the Nikon FM..the others were found combination of online used camera dealers and just lucking into them at thrift stores/antique shops. Love shooting with film but what with limited selection of film in local retail outlets and development cost I don't do as much shooting with film as I'd like to I just like having those classic film cameras..they are works of art in themselves.
I don't think you should switch over from an F2 at all, just try the F3 out :) For the most part they're both quite similar (except that F2 is mechanical with its shutter while the F3 is electronic, F3 has TTL metering as the light meter is not in the viewfinder, but in the camera body)
What happened to your Kiev 60? I still shoot the hell outta mine. IMO the quality I get back with it rivals a lot of the more well known and hyped medium format cameras.
I got mine nikon f2 for 200 and it came with a 55mm f.2!! It's a really good camera!! First time I got to shoot with it, I dropped it on the ground!! It still works amazingly and it's very accurate!!
A year ago I found a rewind knob for the Bronica ETRS here in Germany. Bought it for a euro and sold it to the US for 79$ the next day. Hope you will find one way cheaper for the ETRS :)

I’m betting I’m going to be odd man out here, given the likely audience, but just do not get this current hype for 8mm or even 16mm cine film. It’s like celebrating something for being crap. This lo-fidelity fanboy is faux nostalgia. Usually for people not even born when images looked like that because there was f all affordable choice.
About your SX-70s, why don't you just take the whole "roller assembly" part of the one that's dead and switch with the one that's missing the front plate? It's super easy to do!

for the polaroid sx-70 you can replace the film door from the broken one and get a fully function sx-70
