Been so happy with all seeds from your farms so far. Silly question. If some varities only store until mid Winter, how do we keep them for planting in the Fall?

If you know what your doing like me, I will tell you in metric. From four bulbs each with 4 cloves a Rocambol type with 20 bulbils per umbel that I first planted in November 2018. First year harvested 16 bulbs and 16 umbels.second season planted 79 cloves and bulbils. Harvested 79 bulbs, only 16 umbels and 440 rounds. season three, 255 bulbs and umbels 440 first reproduction bulbs and only a handfull of rounds as the bulbils made small worthless bulbs, plus 255 umbels, first reproduction I break the scapes. Harvested around 3475 bulbs, about 5000 rounds as figured out how to stop them forming small bulbs and 30kg bulbils. 4 season just harvested 10,000 bulbs and several thousand rounds upto two inches. Lost over half of the bulbils to mold and only havested about 1000 umbels this year. I count 1 on 10 yield and plant at 50 to 70 per m2 depending on the size of the cloves or rounds or at what stage reproduction, a first year with my sort only has 7 leaves and mature plant 8 or more. You need to count the average weight of clove multiplied by how many you plant. As for yield that is up to you, if I want more per m2 I need to put more in.
No because all organic means is not sprayed with chemicals. I think you mean is there a way to tell if it's a heritage garlic (sometimes referred to as "heirloom").
fix the adds by immediately hitting mute then back button in your browser then hit forward button and it plays. These adds are beyond a joke, always twice the volume of the video and your settings. They play you the same ad 10 times in a row just to ruin your day

you harvest in June and July then plant a few months later
Can store garlic in freezer in a container just separate cloves but do not peel them when you are ready to use the garlic just peel what you need.
