Traditional talaga ang pork spare ribs sa pork sinigang, cut up in one to two inch pieces for easy eating. My favorite addition too is gabi or taro to give the broth thickness (malapot) . Sometimes I'll use pork or beef pata for the collagen if available kasi dito sa Texas may kahirapan bilhin itong exotic meat cuts. I totally approve of your expertise in the kitchen.
