      Ditto! Rice milk and oat milk would be great too! Mouthfeel on non-dairy milks is rough...

    Most bread crumbs are not dairy free or truly vegan. There are a couple of brands out there but most are not available at your general grocery store. I like the idea of the crispy shallots on the mac and cheese. Thank you for sharing.

    Hiw do you make the soya bean powder?

      This is not soy bean powder, this is soy milk powder. Dehydrated powders are usually only available commercially but theoretically you can dehydrate soybeans and then ground them, but not sure that would actually yield anything useful.

    Can you help? Can you make soy milk powder from soy flour? Because i'm a single household soy milk powder is so much better for me than liquid. i can't find an answer to this question. thanks kim

    What about using lecithin (liquid or powder) to emulsify the soy milk instead of the gums?

      Depends on your recipe. If you used another plant-based milk powder in place of soy milk powder it'll of course have a different texture and taste.

    Can you use soy milk powder to make douhua or tofu? I've been testing it out in so many ways, but I can't figure out how to get it to coagulate. I am also only using GDL, so maybe I need something different for soy milk powder? Please help 🙏!

      soy milk powder will not make tofu, we've tried but the processing has removed its ability to coagulate.

    Could I use this recipe with hot, fresh soymilk from my soymilk maker or would I need a different thickener for hot?

      If you just want to thicken and sweeten the fresh soy milk you can definitely use the same recipe

    Do you have any recipes/techniques for a soy-based coffee creamer? Soy milk alone lacks the creamy mouthfeel and the opaque whiteness needed for a satisfying cup of coffee. My favorite was the Trader Joe's soy creamer (made by Wildwood Foods, I believe, but now discontinued). The Silk "Original" soy creamer is also pretty good -- it has the right mouthfeel and whiteness, although I think it's a bit too sweet. (And the Silk "Vanilla" variant is over-the-top sweet, almost like having frosting in your coffee.) I've tried numerous other store-bought creamers -- e.g., oat-based, coconut-based, nut-based -- but most seem gummy rather than creamy and none are as satisfying as the good soy-based ones.

      Sun Jul, I read your comment and it's as if I wrote it. I agree with you completely on all points. I still miss the Wildwood Soy Creamer. And, yes, soy creamer recipes from Modernist Pantry would be great.

      No, there's no way to DIY soy milk powder, specialized commercial equipment is needed. soy flour is ground up soy beans, and that's not soy milk powder which is spray dried from soy milk
