That all looks so good! Black walnut ice cream has been my favorite ice cream since I was a kid. I do look for the kinds with real black walnuts at least. I'll have to try making it like you do. I still crack black walnuts and hickory nuts in a vice,, but using those wire cutters is so much better for getting big pieces than anything else I've come across. Thanks for all your videos and cooking tips. Everything of yours I've ever tried has come out well, even though I'm more somebody who enjoys eating than I am a cook, lol.

Would it be possible to swap black walnuts for heartnuts? They look quiet similar. We don´t have black walnuts here locally (Belgium). But there is a lovely heartnuts and hazelnut orchard close by. It looks really delicious
I gathered some black walnuts this year, originally just gathering them to get them out of my yard. I decided to hull them and keep the nuts, but they taste like turpentine. The hulls became black and mushy and full of maggots before I hulled them so I'm wondering if it makes a difference in flavor whether you take off the hull while its still green, or is that just how they are supposed to taste? I've also noticed that darker colored nuts are worse tasting that lighter colored ones. Thanks.
Trying to keep this brief..So, black walnuts will always have a strong flavor. You may have to work to like them, like gradually developing a taste for hot sauce. Once they get you you’re hooked though. If the nuts aren’t hulled and dried after picking it can make the flavor a little stronger or develop bitterness. I have a walk through of how to properly clean them on my site.

Yeah if you do just make sure its a little, to taste. Use strong coffee as if the ratio changes too much it could break the emulsion.

I use candy caps instead of maple syrup....also xanthan gum instead of corn starch
Why not blend the walnuts with some milk and extract most of the flavor and then add it all to the pan.
U R using a Cuisinart brand in the video. What brand did U recommend? Is "COMPRESSOR" a brand or a model designation? Never heard of it.
