Yep. I bake a few 60/30/10 all purpose/whole wheat/dark rye, sourdough loaves every week. You can get affordable, organic bread flour at places like Costco. I let the dough rise, covered, on the counter till it doubles in size. Then I put it in the fridge for two days to let the yeast and bacteria do their magic. Bake in a Dutch oven for a beautiful and crunchy crust, or a bread pan for a sandwich loaf.,
In bakeries (in the US anyway) the bakers must wipe down the table and dust with whole wheat flour. If they dust with white flour, then they can’t sell the bread as 100% whole wheat.

I wholeheartedly agree with you. I think it’s because of sales of bread is down because people are not buying the commercial bread. I bake my own bread when someone in my family asks it, other than that we don’t eat much of it.
I’ve wanted to try sourdough bread because I’ve read it’s one of the healthiest. I have yet to find one in any store, even in the “fresh bakery” section, that doesn’t have a long list of crap in it. I don’t want that junk in my body.
@@gailgrieco1781try to make it. My sourdough starter is well over 5 yrs old, someone gave it to me (which is the easiest way to begin). There are some great UA-cam channels that show you how to begin and to keep it simple! People make it way too complicated and then never make it again. But if you get a decent routine it’s actually easy, but it does require time and patience. It’s fun to make though. Best P.S. incase you rather try it Bread Alone makes a decent sourdough, simple clean ingredients if you can find it, I would try your local health food store! Anyway my sourdough starter gets fed every 2 weeks or up to a month, but i keep it in the fridge, so less waste. Plus I make a very small amount. The jar is always about a 1/4 filled in the jar. But I have 2, incase I un-alive one. See how we complicate things 😅!
