  • When it comes to long term food storage, vacuum sealing jars will allow your food items to stay fresh much longer.
    It is important to use safe practices, and you can vacuum items like dehydrated items, spices, herbs, and freeze dried items. Vacuum sealing items is not a safe alternative to canning for items like fruits and vegetables. You can see my canning blog (linked below) for information on home canning.

    I also vacuum seal items I keep in the refrigerator... Like milk that I buy in gallon jugs. I rebottle the milk into quart jars and vacuum seal. It seems to me that the milk lasts way longer this way. 💕🌞🌵😷

    I have had a few small vacuum sealers for reusable bags and my favorites have always been the ones that auto shut off when they have achieved a good vacuum.
    One of the first I got had a pair of adapters to use with regular and wide mouth jars. The sealer itself died when I had a jar too full and sucked some liquid through it.
    I really like my current sealer the "VOYOR Handheld Vacuum Sealer" from amazon it doesn't come with any accessories but it is usb-C rechargeable and only shuts off when it gets a good vacuum and is less then $25. This sealer is designed for the reusable bags and not for jars but can be used with accessories from other sealers to seal jars. Not a representative just like the sealer.

    I store my pasta in jars so if I had mice, they couldn't get in to the box. So while I'm at it, I still vacuum seal the jar. 1. Because if vacuum sealed, I don't need a ring. 2. I think the lack of oxygen helps keep the pasta from going rancid longer. 💕🌞🌵😷

    Hi Amy, I’ve been following you for about a week now and I just now fluffed up my fridge to mimic yours. I’m looking forward to saving on produce as I have a large family question. I had decanted my yogurt into the glass jar do I start with a metal lid or a plastic lid? Thank you in advance- janice

      Thanks so much for watching and following along. I'm glad that you have been able to put some of the information to use. I would use a metal lid on the yogurt so that it is airtight.

    Can you safely freeze something that was sealed this way (eg tomato sauce)? I know it’s not safe to leave on the shelf unrefrigerated, but does this type of vacuum closure lengthen the storage time for refrigerated and frozen items?

    • @TheCrossLegacy
      @TheCrossLegacy  3 місяці тому

      It's not needed for refridgrated or frozen items. If you are freezing liquids make sure not to fill up the jar more than 3/4th of the way and cool to fridge temps before freezing.

    I have seen some people store carrots and celery in glass jars with water but you didn't...why not?
    Which is better?

    • @TheCrossLegacy
      @TheCrossLegacy  4 місяці тому +1

      They will stay crunchy for a month without water. When you store with water the item tastes like the water so if you use tap water it can taste like chlorine. There is really no need for the water.

    Hi Im a new subcriber to your channel. I eat a whole food plant based diet and have found all your tips really useful, thank you for sharing them! I'm glad to put all my canning jars to use, I used to pressure can years ago when I had a plum tree and boysennberry bush in my backyard. But lately I have been wanting to start making pickles and sauerkraut.
    In reference to vacuum sealing jars, I have an old manual vacuum sealer, however it is probably not as effective as the type you use, and it is also harder to use, so I may need to upgrade to a cordless one.
    I was curious if you will ever do a revision to your ebook to include a more complete guide for produce care, for instance including all seasonal produce instead of having separate guides to make it easier to reference and more economical on the wallet.

    I have leftover cooked collards that I would like to save for meals. Can I use vacumm sealing on these c ooked I already have ri ms and seals. Can I use vacumm sealing for this task. Should I get the collards hot then place in jars maling sure too I leave enough room left empty and then seal. Do I need to do a water bath after they have been sealed? How long will they last on the shelf.
    Is there a book regarding what can be vacumm sealed?

    • @TheCrossLegacy
      @TheCrossLegacy  2 місяці тому

      Hi the collard greens would need to go into the freezer to be used later. Vaccum sealing does not replace canning to make fresh produce items shelf stable.

    One thing you didn't show about vacuum sealing is how a sealed lid is depressed and if it's not sealed, it still has the button popped up. Maybe add a short to demonstrate this. 💕🌞🌵😷

    • @TheCrossLegacy

      Yes I did miss doing a pop down in the demo of it but mostly I did this video because even the box is showing unsafe canning practices and videos like this that are going viral on tiktok telling people that they can make liquids, fruit, veggies, stew shelf stable because it was sealed. It is very scary the uninformed information about food preservation that is being shared and people believe, which could be harmful. If you would like to see the video I am referencing it is linked in the description.

    • @suzisaintjames

      @@TheCrossLegacy, no I believe you. When the plastic lids first came out... People were saying (falsely) that you could use the plastic lids for water and pressure canning. So misinformation, is constant. You can only do your best to reliably give out the correct information... Like you need heat to kill the germs you seal up in the jars, or risk death from botulism.
      I watch an Amish lady who water baths meat and admits that it's probably not the right way, but her family has been doing it for generations and has no plans to change. Just like in this stressful political climate, there's nothing you can say to change some people's minds, but in order to sleep at night, you've gotta try. 💕🌞🌵🤔

    This is why almost every time someone gives me a jar of “preserved” food, I never use it. I always toss the food, and keep the jar for my own use, unless they asked for it back. Unless I know them and 100% know that they know what they are doing, it’s not worth the risk.
