  • We are making Chocolate Cornets, Japanese cornet-shaped sweet buns filled with chocolate custard. The shape is very cute, isn’t it? Of course, it is delicious!
    How to Make Chocolate Cornets

    Bread Dough -
    150g Bread Flour (5.29 oz)
    1 tbsp (Raw) Sugar
    ½ tsp Salt
    ½ tbsp Non-Fat Dry Milk Powder
    1 tsp Instant Dry Yeast
    1 tbsp Lukewarm Water
    70ml Water (2.37 fl oz)
    1 tbsp Beaten Egg
    15g Butter (0.53 oz)
    Chocolate Custard -
    2 Egg Yolks
    2½ tbsp Granulated Sugar
    1 tbsp Cake Flour
    1⅓ tbsp Corn Starch
    1 tbsp Cocoa Powder
    200ml Milk (6.76 fl oz)
    10g Unsalted Butter (0.35 oz)
    30g Chocolate (1.06 oz)
    Bread Flour for dusting
    1 tbsp Beaten Egg for glazing
    6 Cream Horn Molds (⌀30x135mm/⌀1.2x5.3 inch)
    Handmade Horn Molds -
    6 sheets of Kraft Paper (125x125mm/4.9x4.9 inch)
    6 sheets of Aluminum Foil (125×150mm/4.9x5.9 inch)

      foil also doesn't conduct heat well, so it's almost instantly ready to handle by hand after any heating.

    I have made these before and they are amazing! If your a fan of Nutella or hazelnut, when adding the chocolate to the custard add a good dollop of Nutella as well, or for more savory use dark chocolate instead of milk :D I do recommend making the cone forms before or while the bread dough is rising. If you have access to the metal cones, buy them. They are great!

    Four years ago I came across this video because I wanted to make the cornets from Lucky Star and actually followed this recipe to a T. It took six hours to make since I wasn't prepared but it was WORTH IT

    Non-fat dry milk powder will increase a savory taste and appetizing aroma. You can probably substitute milk powder for babies, or use 70ml milk instead of 70ml water if you can't find the milk powder :)

    I can't recommend a particular product but how about getting a digital kitchen scale? It usually shows both ounces and grams. I found many inexpensive products ($8~) on amazon.com. Good luck! :)

      fat end. Even though you might think- crap I'd eat all the chocolate then! By eating the fat side, you'd prevent any of the chocolate from falling. Or if you want, peel a little but of the small end and dip it into the fat end.

    Milk will affect the ratio of the water and the dry ingredients so please use the non-fat dry milk powder and instant dry yeast :)
