Japanese Pudding/Purin Recipe - Martina's Midnight Munchies

  • Japanese Pudding, aka Purin, can be found in any convenience store in Japan, and as souvenirs at many different train stations. Today, we're not just going to show you how to make it, we're going to show you how to level it up and make it taste AMAZING. Seriously better than the ones we get at the conbini. Come, check it out. You're gonna love it :D
    Here's the list of ingredients for the recipe:
    For the Sauce -
    4 tbsp sugar
    1 tbsp water
    1-1/2 tbsp hot water
    For the Pudding -
    2 eggs
    (3/4 cup) 200ml milk
    (1/4 cup) 50ml cream
    3 tbsp white sugar
    2 tbsp brown sugar
    1/2 tbsp vanilla
    (Optional vanilla bean)
    Instructions:
    1. Watch video
    2. Copy what Martina did
    3. Eat Pudding
    Longer instructions:
    Caramel Steps:
    1. Oil your heat proof containers and set aside.
    2. Add your 4 tbsp of sugar + 1 tbsp of water to a saucepan and heat on medium - medium high. Don’t stir it or you’ll stop the crystallization process.
    3. When the sugar starts to become golden in colour in one section, gently swirl the pan to even out the water and to keep that section of sugar from becoming burnt.
    4. Depending on how you like the taste of your caramel (sweet VS more bitter sweet), you must stop the cooking process by using the hot water to thin it out. I prefer a darker golden colour, but you can also stop the cooking at a lighter golden colour.
    5. Use a LONG HANDLED spoon to add 1 to 2 tbsp of hot water to your caramel, tilting the saucepan away from you as it will splatter scalding hot candy.
    6. Kill the heat, and swirl the caramel to test the thickness. If it is very thick and syrupy, add a bit more hot water.
    7. Pour your finished caramel sauce into the bottom of the pre-greased heat proof pudding containers of your choice. Set it aside to cool.
    Pudding Steps:
    1. Unceremoniously dump the sugar, milk + cream, vanilla extract, and vanilla beans into a saucepan but don’t turn on the heat yet.
    2. Crack two eggs into a heatproof bowl and gently whisk to blend the eggs, but do not whip it or you’ll add too much air and bubbles. Set aside.
    3. Heat the sugar + milk mixture on medium, stirring until the sugar dissolves totally. Do not allow the mixture to boil.
    4. Once the sugar seems all dissolved, very S L O W L Y add the hot milk mixture to the eggs, bit by bit, stirring gently (this is called tempering).
    5. Once the temperature of the bowl matches the temperature of the milk mixture, you can dump the rest of the mixture into the eggs.
    6. Gently pour the completed egg + milk mixture into the pudding containers with the caramel resting at the bottom.
    7. Using tinfoil (or lids if using jam jars) cover the pudding so they can steam.
    Waterbath Cooking
    1. Place the ready filled pudding containers into a pan (preferably one with a lid), and carefully fill the pan with water. You want the pudding inside the containers to match the height of the water, but don’t let the water overflow into the pudding containers themselves.
    2. Bring the water up to boil and then drop the heat down to a simmer. Keep the pan covered with a lid if you have one to create an even steam.
    3. Let the pudding gently simmer in this bath for 15-20 minutes. It needs this alone time to relax and reflect on its day.
    4. Check in on the pudding around 15 min, it’s okay to uncover the tinfoil, you’re looking for a still jiggly pudding, but not something soupy. If it has a soupy liquidy middle, keep cooking.
    5. Once it is all set, remove the containers from the hot water bath, and let cool for 15 min on the counter.
    6. Place them into the fridge to cool for 3-5hours (or overnight) and if you have roommates, write threatening notes on the puddings to prevent them from eating your hardworking.
    Serving the Purin (the upside down method)
    1. If your pudding doesn’t want to come out of the container, place it in a bowl of hot water for a few seconds to melt the edges a bit. Or, you can use a toothpick on the edge to create an air gap, or gently use your fingers to press down on the pudding edges to loosen.
    2. Put a plate or bowl on top of the pudding, and flip upside down! WHOOOOAAAA~
    3. Hurrah! You’ve made some kickass homemade Japanese style pudding. Enjoy and instagram the heck out of it.

    So, I went to culinary school. I worked as a cook for over a decade (I work for hotels in a different capacity now because my body was falling apart). That is one A M A Z I N G custard, girl. For a FIRST TRY?? Holy moly you did great! They look absolutely amazing and truly professional. Perfect wobble, and while I was watching I could viscerally FEEL that jiggle. 12/10.     I know you two are on vacation. But I have to say. I was having a rough night. In my slump you were recommended. I've loved you since the beginning but tonight it was overly helpful. I remembered your video about dealing with chronic illness. It made me hear you in my head. I am not alone. I am still here. And all I can do is try. Instead of making some mistakes and endangering myself I listened to mom Martina and asked for help. Still not feeling the best but I cant end living without going to Japan and seeing the two brightest faces in the world. I hope you two had an amazing time. Thank you for always being there for me.       Luis Zenteno actually they are very similar but flan is more thick and creamy. Purin are a lot lighter and soft.

    Omg, I used to eat Purin pretty much every day when I studied abroad in Japan. My host grandmother always gave one to me for dessert-the memories! 😭 I never even thought of making it from scratch, this looks amazing!

    Grandma adds a splash of cognac or similar sweet wine to the mix and it gives it a deeper flavour (tho she makes flan, very similar to purin). I love how you can customize it a bunch.

    My housemate made caramel once. It looked like a hazardous process. I made custard using egg yolks and corn starch. Also, we used half-and-half as the milk base. All very satisfying.
    These videos are a joy. More purin for Meems would be my suggestion.

    I tried this recipe today. I was having some problems with the sugar hardening before it even got brown. But I added a little bit of lemon juice the next time I tried and that seemed to stop it from crystallizing if anybody else is having a hard time with it. Thanks again Martina, love the recipe!

    Tip for anyone struggling with the caramel: if it keeps turning into crystals try adding some lemon or lime juice to it and mixing the sugar and liquids off heat first. That’s how I got mine to be a sauce

    On The Great British Bake Off, they use the same method of making caramel - adding water.
    The point is to make it easier to avoid crystalizing the sugar. That isn't desirable.

    So this night I had a dream that I was with you guys at a pond somewhere, and we could see a buch of baby ducks swimming around but they didn’t have their mom with them. Then we saw a HUGE crocodile swimming around them and we started to freak out and decided to help the baby ducks. So we started throwing nets at the crocodile to try and get him out, and we almost got bit multiple times. But at the end we managed to get rid of the crocodile and went back to watching the cute little ducks! 😂😂
    By far the most random dream I have ever had!!

    Ok, so I FINALLY tried your recipe, Martina. And the result is...
    IT'S THE BEST PUDDING I'VE EVER TASTED!! The timing was longer for me because I was using a small steam oven. Also I let my mom tried one bite, and she's NOT a sweet tooth person, and she LIKES IT!
    The texture was silky and creamy, sweet but complimented well with slight bitter caramel sauce. The touch of brown sugar makes a huge difference!
    Definitely will try this again on matcha flavor ;) Great job.

    I've watched a lot of purin videos (because I love purin OK) and this recipe is by far the best. Mostly because you thoroughly explain the process and the ingredients - I love that! ALSO because it looks delicious. Thank you and great job :3

    Somehow my husband and I ended up with almost three dozens eggs and I didn't know what to do with all of them, then I thought of this video. I think a purin-making marathon is coming up for me soon.

    This is like bánh flan in Vietnam. My grandma used to add in sweet condensed milk too. It's a yummy and easy treat. :p It's good with coconut dream poured on top and some crushed ice too. 🤤

      It's not flan, nor a Japanese take. It's a pudding, almost very culture has a recipe similar

      This is pretty much identical to flan. Only difference I saw was adding sugar to the custard mixture and warming it on the stove. Otherwise the ingredients are the same

    I love those plates!!! I looked them up and they are a bit out of my price range but the mugs are just as cute.
    Also this is like flan in Mexico. But you make it look super creamy 🤤 will def make!
    Not sure if there’s a difference 🤷‍♀️.

    We call them Creme Caramels in the UK... big staple in my childhood, the pots we get here have a little silver tab on the bottom, so take the lid off, turn upside down and then pull the tab... little bugger slides right out... but now I can make them at home... cheers Martina and Simon you guys are just the most amazing!! xx

    Hey Martina, you got the terms mixed up. You want your sugar to melt and "caramelize". Crystalization ("crystalize") is when your caramel become grainy but love the video. Also great job with your tempering skills! ❤️❤️❤️
