Ingredients:
2 Cups Whole Wheat Flour (304g)
2 Teaspoons Baking Powder (10g)
1/2 Teaspoon Baking Soda (2.5g)
1/4 Teaspoon Salt (1.5g)
1 Cup Fresh Orange Juice (240m)
1/4 Cup Honey (60ml)
1 Egg
1/4 Cup Canola Oil (60ml)
1 Cup Dried Cranberries
Directions:
1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
2. In another bowl, whisk together the orange juice, honey, egg, and canola oil until well combined. Add this mixture to the dry ingredients and mix just until moistened. Fold in the cranberries.
3. Prepare a muffin tin with cooking spray or line with paper liners. Fill each cup 3/4 full with batter. Sprinkle coarse sugar to tops.
4. Bake in a preheated oven at 375°F for 15 minutes or until an inserted toothpick comes out clean. Let muffins stand in the muffin tin 10 minutes, then remove to a wire rack to cool. Option to serve whilst warm or to let cool completely.

Why wouldn't you use fresh cranberries instead of dried? Tastes so much better.
Can I use almond or oat flour ?
And replace the oil with coconut oil?
You can certainly try it. When I bake with almond flour I feel like the texture comes out differently, so keep that in mind. Also, whole wheat flour absorbs a lot more liquid, so you might want to add a bit less orange juice. Maybe start with 1/2 cup, then see if the batter is moist enough. And yes, you can use coconut oil.

Yes, you can use fresh cranberries. Just toss them with a bit of flour before adding them to the rest of the ingredients so that they don't sink while baking.
This looks good but they aren’t the best. I expected cranberry orange flavor. This recipe as is did NOT deliver.
I edited it after the first time. At first try they were rather bland and had zero orange flavor .
2nd time around :
I added in addition to the orange juice (which I used juice with pulp)
Orange extract 2 tsp
And the zest of two oranges
I also swapped 1 cup of whole wheat flour with almond flour
1/2 cup of oatmeal
added 2 tbsp flax
2 tbsp chia
Swapped out 1/4 oil
For 1/2 cup butter
Result ? Texture was perfect and taste was Delicious !!! This was what I expected! It’s basically a different recipe then isn’t it ? Lol

I “swapped” out the whole wheat flour . Meaning replaced it with 1/2 cup almond flour and 1/2 cup ground oatmeal .
