I cook neck bones once a week. Pork or beef!! Great little cut of meat that's always cheap! My fave is " neck in rice". Think chicken n rice. But with seared neck bones!
Season your meatbith side. Add a little EVOO and butter to a pan and sear the meat side. Remove from pan add more oil and butter. Add some diced onion & bell pepper. Cook them off. Add meat back to pot. Cover with water. Start cooking the meat down, adding water when needed. When meat is falling off the bones. Add uncooked rice. I just guess.. but my stock pot it's normally 2 cups of rice. Cover and turn down. Cook rice for 25 mins. Takes about 2.5 hours cooking time
