To Make Sakkarai Pongal
Raw Rice - 1 Cup ( 250 Ml )
Water - 2 1/2 Litre
Moong Dal - 1/2 Cup
Jaggery - 500 Gms
Cashew Nuts
Raisins
Ghee - 1/2 Cup
Dry Coconut - 1 Cup
Cardamom Powder - 1 Tsp
Cloves - 4 Nos
Method:
1. Take raw rice and wash it with water. Soak the rice for a few minutes.
2. Take water in a pan and add moong dal to it.
3. Mix it well and cook for 20 mins.
4. Then add in the soaked raw rice and water.
5. Cook the rice and dal completely. Add ghee, mix and keep it aside.
6. Take ghee in a pan, add cashewnuts, raisins and grated dry coconut.
7. Add cardamom, cloves, mix and keep it aside.
8. Take jaggery and water in a pan.
9. Let the jaggery completely dissolve and then add the roasted nuts, fry fruits mixture.
10. Mix it all well and cook for about a minute.
11. Transfer the jaggery mixture into the cooked rice and add ghee. Mix it all well and cook for a few seconds.
12. Turn off the stove and serve the temple style pongal hot and nice.

Hi I am from Sri Lanka. I cooked Pongle following your recipe for the Vasantha Panchami Saraswathi puja and the results were amazing. I used local Kithul Jaggery (a native palm jaggery) instead of usual ugarcane jaggery. I also took the liberty of adding pure bee honey before offering it to Ma and it brought the flavour to a totally different level. When distributed as prasad, everyone loved it more than anything else. My Sis in law who were visiting us from Sydney loved it so much she kept it refrigerated and ate for days as a dessert. Brilliant but sadly being vegans we can not use ghee which is the heart of this dish I guess .
You could use coconut oil if you want

Nice recipe but half cup of ghee seems too much, rest is fine.
