    Love his personality! Been to his restaurant in Fort Lauderdale. He was there cooking and the food was absolutely amazing! Go hungry because they send out complimentary tasting plates throughout your whole meal. You’ll be stuffed

    "If it's (the food)too salty, throw it out??"Uhhh, yeah, sure, I'll just throw out $20+ of meat, b/c u couldn't just tell us a recommended amount so at least we knew where the "ballpark" was. Sure, we can do it however we like, but the concept of a *recipe* is 2 provide the amount of each ingredient that the originator of the recipe uses, so that way we at least know how much 2 use to give us the SAME results they get, cause that is generally the reason why we want their recipe in the 1st place!

    4:07 --- He says, "I don't use Parmesan, I use __?????__ cheese??? Anyone know what he said after "use?" Please, no guesses, only answers. I can guess, too. Thank you.

      He said, "I don't use Parmesan, I use Locatelli cheese"
      Locatelli is a brand name of cheese and Pecorino Romano is a variety of cheese. Just use Parmigiano-Reggiano. Easier to find and you will not taste difference.
