Cara, I have recently started peeling my citrus before I use it for cooking or whatever else, and retaining the peels in tupperware for use as garnishes in my drinks. OH MY GOODNESS expressed citrus kicks my drinks up several notches. I used to think twists as garnishes were just about making drinks look pretty. Now I know that expressing them adds so much new flavor and aroma, I'm never looking back!
Haha honestly at home I hardly ever even try and make them look pretty- just express and chuck in there #uglydelicious!

Totally. My partner has been playing around with a honey whisky liqueur so we have about 6 different honeys in the house at the moment, it’s been fun using the same gin and seeing how the honey changes it 🍯!

Ooh no I haven’t but I did make an amazing one with Steve the Bartender’s Threefold Gin which has lavender in it- highly recommend if you’re in Australia and can find it 😊

I prefer using lime juice to lemon and making the business cocktail, but they both are great.

Lemon with honey was a childhood cough remedy growing up. Looks like I'm going to have to adult it up a bit lol. Gin's my shit right now, so thx for this.
A variation of this exists with Cuervo Gold called “El Dorado”. I consider cuervo to be trash, so I’d get a better tequila.
I may try it with Mezcal and agave. I think I’ll call it “Aguijón” (spanish for stinger).

Aguiijón Experimental version #1:
1oz Sombra mezcal artesanal espadin (I don’t love it, it tastes like copenhagen... but there are exactly 3 choices locally 🙄)
1oz bacardi carta blanca
1/2oz chili honey syrup (1:1:2 chili honey, raw honey, hot water)
1/2oz agave syrup (1:1)
1oz lemon juice
1/2oz lime juice (tequila/mezcal needs lime imho)
1/2oz orange curçao
This version is smoky AF, and quite spicy. Let me know what you think.
Any thoughts or opinion on a stronger honey syrup when recs call for honey water/syrup (e.g. 3:1 honey to water)? The rationale I’ve heard is that a 1:1 just doesn’t contain enough honey for it to shine through, where as a 3:1 will give you more pronounced honey notes. What do you think?
I guess where boney is not the star of the show I prefer the 1:1 to make it more subtle but you could absolutely make a stronger syrup to make it come through more!

Just made it. I wasn’t too crazy about it. I feel like I could use little less honey syrup or may be replace honey syrup with agave syrup or simple syrup. I did finish it though
That’s fair pal, did you find the honey a bit overpowering? You could even try splitting the boney with sugar syrup if the sweetness level was ok for you, or try a gentler tasting honey/stronger gin.
Yes honey was definitely overpowering. I used tanqueray gin. Not only that but it was little too sweet for my taste. May be I’ll try with less honey or more citrus or both. I’ll play around. Thanks 🙏🏻
Or replace the gin with bourbon to make it a Gold Rush, and serve it with a big ice cube in the glass :)
Bee's Knees is one of my favorite cocktails, particularly with Aviation gin, BUT... Don't know if there's a name for it (I'm sure our knowledgeable host would know), I've been making them lately using Jameson Black Barrel or Rittenhouse. If you liked this cocktail, seriously, try with them. It's also tasty with Monkey Shoulder. The very slight smoke lends itself nicely with just a smidge more honey.
Aviation is great for these light and bright cocktails. Made with bourbon this is called a Gold Rush, I’m not 100% if there’s a specific name for rye/Irish but I’m sure they’re delicious 😋

Made with Rye it is called “Fool’s Gold”. Rittenhouse would be a great choice for that.

Habit! I just learned using a knife. I use a peeler in the bar more, but the bar where we film doesn’t have one lying around and I always forget to bring it haha. No magic tricks...
What would be 5 good cocktails for a wedding reception?
I would go with Punches or stirred down (but not too boozy) drinks - things that can be batched in advance so they can be served quickly on the day. But it’s a great idea for a video!

Absolutely! There are plenty of times in the middle of a busy service when I’ll taste and be like...‘would probably help if I’d remembered the lemon juice’ haha
