I use leeks in soup all the time, and the dark greens are really good as well! A good way to cut them is to leave the stems on. About half an inch from the roots make a cut all the way down so it's in half but still connected. Then you can do a half turn and do the same so it's in quarters but still all together. This makes it super easy to clean, as leeks can often have a lot of dirt in them between the leaves. Then you can just dice it from there!
I understand the reasoning as to why it would be smarter to have the food-cooking system outside the sleeping area, but I'll admit that this is the first time I've seen it done so purposely right next to your sleeping area! But it makes complete sense! Bear-proof containers are effective, but distance from edibles has always been the best deterrent for wildlife!
3:10 maybe because you are harvesting from an urban city. I am big into harvesting game but maybe with it living in a urban area eating who knows what that could have something to do with it.

Squirrel is tough, but any meat will get tender if you stew/braise it lone enough
