    I just made these last night...they are amazing! I subbed in coconut extract instead of vanilla, used a bit more orange zest, subbed in some poppy seeds because I only had 2 tbsp of sesame seeds,...and added in some pumpkin seeds...when the bars came out of the oven...it was getting late, so I just chopped up the chocolate, and scattered it about on top and it melted in....cooled overnight,...and they are amazing! I think I had more zest than was called for in recipe...but just threw it all in to the melted butter, and added it all in...Great for on the go....or for when me and the hubs go biking and need a take-a-long snack! Dot, your recipes...ALL are fantastic! Thankyou so much!!!!

    Dot, I LOVE this recipe!!! I've made them several times already, and keep them individually wrapped in the freezer for those "dash out the door" mornings. I love the cranberry "zing". The last time I made them, I had to "tweak" the recipe using things I had on hand. I used my husband's beloved Brazil nuts instead of walnuts, 1 1/2 teaspoons of maple extract instead of orange zest, and added 2 heaping teaspoons of confectioner's erythritol to the chopped nut mix before adding eggs.(Not enough to make them "sweet", just flavorful) After baking, cooling and drizzling with melted 92% cacao bar, I slapped the pan in the freezer for a few minutes while I stirred up a little confectioners erythritol glaze in a small bowl with water and a touch of heavy cream. I drizzled the glaze (using a tiny hole snipped in the bottom of a sandwich bag) overtop of the hardened chocolate. The glaze stayed on without breaking off (due to the heavy cream). They looked so beautiful...and turned out so incredibly tasty that my husband and two (non-keto) sons helped themselves to half of the batch before I was able to hide them in the freezer for myself. Now, I have to make 2 batches! The maple smell along with the roasting nuts is irresistible!

      I forgot to add....I use almond butter instead of peanut butter (PB gives my husband stomach upset).

    Just took these bars out of my oven,,yummy!!! They look just like yours Dots. Got 24 bars,,but in morning going to break one up and have myself a bowl of granola cereal in almond coconut milk. Thankyou dear friend for this great recipe!!!

    I love your channel so much! I started keto only three days ago and am already down 10 lbs (I know its water but Im still over-the-moon thrilled)!! Your recipes are absolutely wonderful, healthy, and so delicious (Ive already tried a few)!!     Dot, I have watched this video I'd say upwards of 20xs. I finally got all the ingredients together. This was by far the most labor intensive bars I've ever worked on. They smell so good and I'm pleased to say they are worth the work put into them to make. I was looking for a breakfast bar to take to work with me. Thank you for going thru all the steps one by one. They are most centrally a do over. I'll keep them on hand.

      It's a lot better then I thought it would be. Adding a few things took place of the cranberries; however I'll be adding those next time I make this. There worth the time it took.

      Okay - today I made the cranberries. I had a bag in my freezer. They turned out amazing! I have missed dried cranberries. I bought some freeze-dried ones a few years ago but they were weird and expensive. Tomorrow I will make the bars. Plan on taking them on a long weekend trip we are taking this weekend. Thanks girlie!!

    Dot, if you add your peanut butter to the melting butter it mixes with the solids easier.

    I was JUST telling my hubs Granola Bars are a weird hangup (trigger) for me. I made my kids low carb granola bars "for lunches and snacks" and ate 2/3 of the pan myself!😬 I'll try this though!

    New to your channel. I just made your cheesesteak Casserole. Its freaking amazing! I'm going to make your pizza casserole tomorrow. Keep the casserole's coming. One of the reasons I failed keto after being faithful for 18 months, I got tired of cooking all the time. Casseroles is something I can do to cook in advance and freeze. Also, can you link to the hazelnut flour you buy? I want to make this granola bar recipe and your pumpkin bread recipe. Thanks so much for the great recipes!

      For hazelnut flour, there's a lot to choose from, but you can look for Bob's Red Mill at your grocery store, and if not there it's definitely on Amazon.

    Another great video Dot. I'm def going to try this with a peanut butter here that is called Whole Earth which is so healthy and only contains roasted Peanuts (97%), Sustainable Palm Oil, Sea Salt. One major well know food supermarket called Iceland here has banned Palm Oil because of its devastating effects on wildlife, habitats and people where it is grown.

      Interesting, hadn't heard that. But yeah, you can substitute any healthy oil for it really (though I haven't tested others of course).

    Great recipe!! Looks yummy. To chop nuts I simply put them in a plastic bag and give them a whack with a rolling pin.

    They look delicious. I weigh this morning and hadn't lost an ounce,,boo who. I didn't do the intermediate fasting this week too much for I thought maybe it was making me feel kind of weak. Well I know it was for I'm not use to skipping meals. But hoping for nice weather soon so I can start walking more.
    The bars look great. I will need some dried unsweetened cranberries. I'll check out your recipe for maki ng those. If not too time consuming I'll do it,,or either try to order from Amazon lol!! I miss oatmeal and cereal so much,,these bars should help,,thanks Dot!! Might could crumble the bar up add some unsweetened almond milk and eat as cereal? I'll let ya know if I try that!!

    Dot, I have been making these bars several times a month for my husband and I for the past year. We love them so, so much! Unfortunately, after 2 years on keto my doctor wants me to cut back on saturated fat and do more of a Mediterranean keto because my cholesterol is up to 360 (hereditary). Is there a binder I can use other than butter or coconut oil that is more heart healthy? Maybe with almond flour?

      Yes, you can put it in at any point. You just wanna make sure you put the butter in such that it doesn't cook the eggs :)

    Dot, is the chocolate unsweetened? If so, could a little added Stevia kick it up a notch? This recipe looks awesome.

      The chocolate is not unsweetened. It's 85%. You can go to 70% but that does change up the carb count too.

    Just bought the ingredients to make these, but these are the first bars I have ever made with eggs in them. Even though cooked, how long would you trust them to sit out? I like taking bars with me to work as a snack, so could be out for hours.

      oops, sorry, I just saw in the "Show More" section. So that is really a good treat with only 4 grams of carb. Still I think I'll wait for awhile to add it into my Keto plan; I'm early days yet for playing with carbs. I've enough trouble with just the veggies!

    ...what can we substitute in for the peanut butter....coconut oil?...and add cacao nibs too!

      Hmm. Peanut butter is what helps make it sticky. You can use another nut butter. A really good one to use is "Tahini" -- sesame seed butter (high in fat). Not sure about the cacao nibs, but I'd think it would add a nice crunch.

    I want to make these but I do not have flaxseed in hand. I have almond flour and coconut flour. Can I sub either of those in?

      Leigh, I don't have exact measurements on hand, but sure, you could sub those in. With coconut flour in particular, you'll likely need more liquid because it tends to absorb more water.

      1.8g net carbs, 4 total per serving (1 bar). High/low/moderate depending on your goals. And as with all my recipes, you can leave out any ingredients you want :) Cheers.
