Strawberry Balsamic Chicken
2-4 chicken breasts seasoned with salt and pepper, browned on both sides, set aside in a baking dish. Top with 1.5 cups chopped strawberries.
Balsamic glaze topping:
1 cup balsamic, 1/4 cup brown sugar, 1 Tbsp dijon mustard, salt and pepper to taste. Combine and bring to a boil. Add cornstarch slurry(1/4 cup water, 2 tsp cornstarch) to balsamic mixture, reduce heat and simmer until thickened, 5 minutes.
Pour sauce over chicken and strawberries, bake at 375 for 15-20 minutes or until internal temp registers 165 degrees Fahrenheit.
Quinoa Veggie Salad
1 cup cooked quinoa
1 cup chopped kale
4-6 medium beets, cooked, cooled, peeled, diced
1 small shallot, diced
1 medium cucumber, diced,
1/2 cup feta cheese
1/2 cup chopped pecans
Honey Dijon Mustard Dressing:
4 Tbsp olive oil
3 Tbsp balsamic
2 Tbsp Honey
1.5 Tbsp Dijon Mustard
Salt and Pepper to taste

I think the Japanese beetles are much worse up in your neck of the woods. I’m originally from WVA and they were always bad there as well. When I was l little my grandparents had 2 HUGE grapevines and one day I walked around the garden and collected all the beetles and put them on the grapevine. Apparently I thought that’s where they were supposed to be because my grandpa always talked about them chewing up the leaves 😅 he was so patient, he just grabbed a mason jar and he and I went out and undid all my hard work. He gently explained to me that if I wanted grape juice, they couldn’t be there.

The patio turned out beautifully!! I'm sure it's nice to relax under the shade of the trees and enjoy meals. I'm having so many Japanese beetles it's insane! I just ordered traps to hang away from my garden to hopefully lure them somewhere else and kill them. I also have June bugs swarming everywhere, some squash bugs that I'm keeping at bay as best I can and have seen a squash vine borer flying around my pumpkins! I've wrapped every single main stems in athletic tape so hopefully that protects my plants from the borer. Last year I barely had any beetles, not a single squash bug and only lost one zucchini to vine borer. This year is killing me!!

The metal pieces for the railroad ties look like SIMPSON TIES. I have used several of their products. They are really nice to have and to use.

Might be too late for this project but the ReStore is a great resource for very VERY cheap building materials. It's kind of a toss up of what they'll have but we got a whole pallet of bricks for like $20 the one time. Good luck! 😊
Maybe some gravel glue will help keep your gravel together better and provide some stability ❤

Seeing the water on the rubber matting makes me wonder if you should drill some holes in the matting for drainage? Or it porous?
What about reusable Japanese beetle traps? We don’t have Japanese beetles here, but I’ve seen other UA-camrs use them successfully. And feed the beetles to their chickens. =)

I just ordered traps and really hope they work! The beetles are loving my green beans! It's weird because I have pole beans on three trellises and they are mainly staying at one end. I'm glad of that but they will decimate that end if I don't do something. I will make sure to hang the traps away from the beans because I definitely don't want to attract more to that area.

I have always been a ‘farm girl’ at heart. I always believed that I’d live on a farm one day. But the Lord took me down a different path and although the ache for something different has always been there, I have been content where the Lord has placed us. Of late I’ve wondered if there is something more for us elsewhere. We both have aging parents, have some of our own health issues and frankly we’re not ‘kids’ anymore so seeing beyond our place now isn’t realistic since neither of us will leave our families. Heck our kids in June turned 40 and 37….I’m really not sure how that happened.
On our current property, a tiny shy of an acre, I am not able to realize all my farm girl dreams but I am blessed abundantly with a space that fills my cup to overflowing (and a ‘to do’ list that is never ending) and I am content! Thank you for the reminder to be content where you are. I need that from time to time.
